Ingredients

For the Rice Krispie Base:

  • 100g white chocolate, melted (for the “icing” drizzle)
  • Green fondant (for the holly leaves)
  • Red fondant or small red candies (for the holly berries)

Instructions

  1. Prepare the Rice Krispie Mixture: In a large heatproof bowl, combine the unsalted butter and golden syrup. Gently melt them together in the microwave in 20-second intervals, stirring in between until fully combined. Stir in the melted milk chocolate until smooth and creamy. Add the Rice Krispies cereal and gently fold until the cereal is evenly coated with the chocolate mixture.
  2. Form Mini Bites: Line a baking tray with parchment paper. Using a tablespoon or a small cookie scoop, scoop out small portions of the mixture and shape them into mini bite-sized balls by hand, about the size of a golf ball or smaller. Place the balls on the tray and refrigerate for about 30 minutes to set and hold their shape.
  3. Decorate the Bites: Melt the white chocolate in a microwave-safe bowl, stirring every 20 seconds to prevent burning. Drizzle a small amount of white chocolate over each Rice Krispie bite to mimic traditional Christmas pudding icing. Roll out the green fondant and cut or shape small holly leaves. Shape the red fondant into tiny berries or use small red candies. While the white chocolate drizzle is still soft, carefully place two fondant holly leaves and three red berries on top of each bite.
  4. Let Them Set: Return the decorated bites to the fridge for an additional 15 minutes to allow the white chocolate drizzle to set completely before serving.
