Ingredients

Cranberry Oatmeal Bars

  • ¾ cup all-purpose flour
  • 1 cup brown sugar
  • 2 cups rolled oats
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • ¾ cup cold butter, cubed
  • 3 cups cranberries, fresh or frozen

Brown Sugar Crumble

  • 2 tablespoons all-purpose flour
  • ⅓ cup brown sugar
  • ½ teaspoon ground cinnamon
  • 2 tablespoons butter

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the bars.
  2. Mix Base Ingredients: In a large bowl, combine ¾ cup flour, 1 cup brown sugar, 2 cups rolled oats, ½ teaspoon baking powder, and ½ teaspoon sea salt. Mix well to evenly distribute the dry ingredients.
  3. Add Butter to Base: Add the cold, cubed butter to the dry mixture. Using your hands, mix and rub the butter into the dry ingredients until it forms a crumbly texture resembling coarse crumbs.
  4. Press Base into Pan: Spray a 9×13-inch baking dish with cooking spray. Press the crumbly oat mixture evenly into the bottom of the prepared baking dish to form the base layer.
  5. Add Cranberries: Spread the 3 cups of fresh or frozen cranberries evenly over the pressed oat base, ensuring a uniform layer.
  6. Prepare Crumble Topping: In a small bowl, combine 2 tablespoons flour, ⅓ cup brown sugar, and ½ teaspoon ground cinnamon. Add the remaining 2 tablespoons butter and mix together until the mixture forms coarse crumbs.
  7. Top the Bars: Sprinkle the crumble mixture evenly over the cranberries layer on top of the oat base.
  8. Bake: Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the crumble topping is golden brown and the cranberries are bubbly.
  9. Cool and Slice: Remove from the oven and allow the bars to cool for at least 30 minutes before slicing into squares to let them set properly.

Notes

  • Storage: Store these bars in an airtight container at room temperature for 1-2 days, or refrigerate for up to 5-7 days to maintain freshness.
  • Gluten Free Option: Substitute the all-purpose flour with gluten-free flour and use gluten-free rolled oats to make these bars gluten free without sacrificing flavor or texture.
