These Oatmeal Green Smoothie Waffles combine the wholesome goodness of oats and spinach with the natural sweetness of bananas and maple syrup, creating a nutritious and delicious breakfast treat. Blended to perfection and cooked in a waffle iron, they offer a gluten-free, nutrient-packed start to your day with a subtle hint of cinnamon and vanilla.

Ingredients

Dry Ingredients

  • 2½ cups rolled oats, uncooked (use certified gluten free if needed)
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon

Wet Ingredients

  • 3 large eggs, room temperature
  • ¼ cup coconut oil, melted + extra for greasing
  • ¾ cup mashed ripe bananas (can substitute unsweetened applesauce)
  • ¼ cup maple syrup or honey
  • ½ tablespoon pure vanilla extract
  • 1 cup loosely packed spinach

Instructions

  1. Prepare oat flour: In your blender, combine the rolled oats, salt, baking powder, and ground cinnamon. Pulse the mixture until the oats break down into a fine, flour-like texture. Pour this oat flour into a medium bowl and set aside.
  2. Blend wet ingredients and spinach: Without cleaning the blender, add the mashed bananas, eggs, melted coconut oil, maple syrup or honey, loosely packed spinach, and vanilla extract. Blend on high until the mixture is very smooth and the spinach is fully pureed.
  3. Combine oat flour with wet mixture: Pour the reserved oat flour mixture back into the blender with the pureed wet ingredients. Blend again to fully incorporate all ingredients. You may need to scrape down the sides of the blender once or twice to ensure everything is evenly mixed.
  4. Preheat and grease waffle iron: Heat up your waffle iron according to the manufacturer’s instructions. If necessary, lightly grease the iron plates with additional coconut oil to prevent sticking.
  5. Cook waffles: Pour approximately ½ cup of batter onto the preheated waffle iron. Cook for 4 to 6 minutes, or until the waffles are golden brown and crispy, adjusting time depending on your waffle iron’s performance.
  6. Keep waffles warm: Remove the cooked waffles carefully from the iron. To keep them warm while you finish cooking the rest, place the waffles on a baking sheet inside a preheated 200°F (93°C) oven.
  7. Serve or store: Enjoy the waffles warm, or let them cool completely and store in the refrigerator or freezer for later use.

Notes

  • Use certified gluten-free oats if you require a gluten-free recipe.
  • If you prefer, bananas can be substituted with unsweetened applesauce for similar moisture and sweetness.
  • Maple syrup can be swapped with honey depending on your preference or dietary needs.
  • Be sure to preheat the waffle iron fully for best results and crisper waffles.
  • Store leftover waffles wrapped tightly in the fridge for up to 3 days, or freeze for up to 1 month.
  • Reheat frozen waffles in a toaster or oven to restore crispiness before serving.
