Ingredients

For the Steaks:

  • 1 lb lean ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg, beaten
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter

For the Gravy:

  • 2 tablespoons butter
  • 6 ounces white button mushrooms, sliced
  • 1/2 yellow onion, diced
  • 2 tablespoons all-purpose flour
  • 3 cups beef broth
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Meat Mixture: In a bowl, thoroughly combine ground beef, breadcrumbs, beaten egg, ketchup, Worcestershire sauce, Dijon mustard, kosher salt, and black pepper until evenly mixed.
  2. Form Patties: Shape the mixture into 4 oval patties approximately 3/4-inch thick. Press 8-10 dimples into each patty using your fingertips to help maintain shape during cooking.
  3. Brown the Patties: Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add the patties and cook each side until a golden crust forms, about 3 minutes per side. Remove patties from the skillet and set aside on a plate.
  4. Cook Mushrooms and Onions: To the same skillet, add remaining 2 tablespoons of butter. Cook sliced mushrooms and diced onions, stirring occasionally until they become soft and golden brown, about 6-8 minutes.
  5. Create the Gravy Base: Reduce heat to medium and whisk in the flour, stirring continuously for 2 minutes to prevent burning and cook out the raw flour taste.
  6. Make the Gravy: Gradually pour in the beef broth while whisking to prevent lumps. Stir in ketchup and Worcestershire sauce. Bring the mixture to a simmer and cook until the gravy thickens to your desired consistency, about 10 minutes. Season with kosher salt and freshly ground black pepper to taste.
  7. Finish Cooking Patties in Gravy: Nestle the browned patties into the thickened gravy and continue cooking until the patties are no longer pink in the center, about 5 minutes.
  8. Serve: Spoon the mushroom gravy generously over the patties and serve hot. Enjoy your classic Old-Fashioned Salisbury Steak!

Notes

  • Use lean ground beef to reduce excess grease while cooking.
  • The dimples in the patties help them cook evenly and retain shape.
  • Simmering patties in gravy ensures thorough cooking and adds moisture.
  • Adjust thickness of the gravy by cooking longer to reduce or adding more broth if too thick.
  • Serve with mashed potatoes or steamed vegetables for a complete meal.
