A simple and flavorful one pot pasta recipe featuring linguine, cherry tomatoes, garlic, and fresh basil, cooked all together in chicken broth for an easy, delicious Italian-inspired meal perfect for weeknights.

Ingredients

Base Ingredients

  • 2 tablespoons olive oil (extra virgin)
  • 1 large onion (chopped)
  • 2 cloves garlic (minced)
  • 12 ounces cherry tomatoes (cut in half)
  • Salt and pepper (to taste)
  • 1 tablespoon Italian seasoning
  • ¼ teaspoon red pepper flakes
  • 12 ounces linguine (or spaghetti)
  • 4½ cups chicken broth (or vegetable broth, low sodium)

Toppings

  • 1 cup Parmesan cheese (freshly grated)
  • 6 leaves basil (chopped)
  • Extra virgin olive oil (for drizzling)

Instructions

  1. Sauté Onion: In a large saucepan or Dutch oven, heat the olive oil over medium-high heat. Add the chopped onion and cook until translucent, approximately 3 minutes, stirring occasionally.
  2. Add Garlic: Add the minced garlic to the pan and cook for another 30 seconds, until fragrant and aromatic.
  3. Cook Tomatoes and Season: Add the halved cherry tomatoes to the pan and cook for 1 to 2 minutes until they start to soften. Season the mixture with salt, pepper, Italian seasoning, and red pepper flakes, stirring to combine.
  4. Add Pasta and Broth: Add the linguine and chicken broth to the pot. Bring the mixture to a boil over high heat, stirring occasionally to prevent the pasta from sticking.
  5. Simmer Pasta: Continue cooking the pasta for about 10 minutes, or until fully cooked through. Keep stirring occasionally to prevent sticking and ensure even cooking. If the pasta looks dry before done, add a bit more broth as needed.
  6. Serve: Once the pasta is cooked, serve it hot garnished with freshly grated Parmesan cheese, chopped basil leaves, and a drizzle of extra virgin olive oil.

Notes

  • Use the best quality olive oil and Parmesan cheese you can find for maximum flavor in this simple recipe.
  • Stir the pasta a few times while it cooks to prevent it from sticking together.
  • You can swap linguine with your favorite pasta shape but adjust the cooking time accordingly.
  • If the pasta appears dry while cooking, add extra broth to keep it moist.
  • Don’t skip the fresh basil; it adds a bright, classic Italian freshness to the dish.
  • Leftovers can be stored in the fridge for up to 5 days. Reheat gently with a splash of broth or water to loosen.
  • This dish is not ideal for freezing as the pasta tends to become mushy when thawed.
