Onion Bhaji, also known as Onion Fritters, is a popular Indian snack featuring thinly sliced onions coated in a spiced chickpea flour batter and deep-fried until golden and crispy. These savory fritters are perfect as an appetizer or a crunchy accompaniment to meals, bursting with aromatic spices and a hint of heat from green chili.

Ingredients

Bhaji Batter

  • 300 g onions, thinly sliced
  • 100 g chickpea flour
  • 1 tbsp nutritional yeast (optional)
  • ¾ tsp ground cumin
  • ¾ tsp salt
  • ½ tsp turmeric powder
  • 120 ml water
  • 1 tsp lime juice (or lemon juice)
  • 1 green chili, finely chopped
  • 1 tbsp chopped fresh parsley or cilantro

For Frying

  • 3 tbsp oil for frying (e.g. coconut oil)

Instructions

  1. Slice the Onions: Peel the onions and use a sharp knife or mandoline to slice them into thin strips. Set aside the sliced onions.
  2. Prepare the Batter: In a medium to large mixing bowl, combine chickpea flour, nutritional yeast if using, ground cumin, salt, turmeric powder, water, lime juice, finely chopped green chili, and chopped parsley or cilantro. Stir well until you get a moderately thick batter.
  3. Adjust Batter Consistency: If the batter appears too thick, add a little more water, one teaspoon at a time, until the batter reaches a consistency that will coat the onions evenly.
  4. Mix Onions with Batter: Add the thinly sliced onions to the batter. Use your hands to mix thoroughly so every onion slice is well coated with the spiced chickpea flour mixture.
  5. Heat Oil for Frying: On medium heat, warm a large frying pan and add at least 1 tablespoon of oil. Allow the oil to heat until shimmering but not smoking.
  6. Fry the Bhajis: Using tongs or your hands, carefully place small portions of the onion mixture into the hot oil—about 4 fritters at a time. Fry each side for 2 to 4 minutes until the bhajis turn golden brown and develop a crispy texture.
  7. Repeat and Serve: Continue frying the remaining batter in batches. Drain on paper towels if desired, and serve hot for the best flavor and crunch.

Notes

  • You can substitute coconut oil with vegetable or sunflower oil for frying.
  • Adding nutritional yeast is optional but enhances a subtle savory flavor and boosts nutritional content.
  • If you prefer less heat, reduce or omit the green chili.
  • Serve bhajis with chutneys or yogurt-based dips for an authentic experience.
  • Ensure the oil is sufficiently hot before frying to avoid soggy bhajis.
