Ingredients

Dry Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground ginger
  • Zest from 2 medium oranges

Wet Ingredients

  • 1 tablespoon fresh grated ginger
  • ½ cup fresh orange juice
  • ½ cup honey
  • ¼ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a muffin or mini bundt pan to prepare for baking.
  2. Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, salt, ground ginger, and orange zest to evenly distribute the leavening and spices.
  3. Mix Wet Ingredients: In a large bowl, thoroughly mix fresh orange juice, honey, brown sugar, vegetable oil, eggs, vanilla extract, and fresh grated ginger until fully combined and smooth.
  4. Incorporate Dry into Wet: Gradually fold the dry ingredients into the wet mixture, stirring just until combined to prevent overmixing and ensure fluffy cakes.
  5. Fill Pan and Bake: Pour the batter into the prepared molds, filling each cavity about ¾ full. Bake in the preheated oven for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool Cakes: Allow the cakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  7. Optional Finishing Touch: For a shiny finish, brush warm honey over the tops of the cooled cakes. You may also garnish with fresh orange slices or glaze if desired.

Notes

  • Use fresh orange juice and zest for the best vibrant citrus flavor.
  • Don’t overmix the batter to keep the cakes light and fluffy.
  • Optional toppings such as orange slices or a glaze enhance presentation and flavor.
