A healthier alternative to frying, these taquitos are baked to golden perfection and served with your favorite toppings like shredded lettuce, diced tomatoes, sour cream, salsa, and guacamole for a delicious Mexican-inspired meal.

Ingredients

For the Filling

  • 1/2 tablespoon avocado oil or olive oil
  • 1/4 medium onion, diced
  • 1 pound ground beef
  • Homemade taco seasoning (entire recipe)
  • 1/4 cup water

For the Taquitos

  • 20 corn tortillas
  • 1 1/2 cups shredded Mexican blend cheese or cheddar cheese
  • Cooking oil spray or avocado oil for brushing

Toppings (optional)

  • Shredded lettuce
  • Diced tomatoes
  • Sour cream
  • Salsa
  • Guacamole

Instructions

  1. Cook the aromatics and beef: Heat the avocado or olive oil in a large skillet over medium-high heat. Add the diced onion and sauté until tender and translucent, about 3 minutes. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and no longer pink, approximately 5 minutes. Drain excess grease from the skillet.
  2. Season the beef: Stir in the homemade taco seasoning and 1/4 cup water with the browned beef. Simmer while stirring until the mixture thickens, about 3 minutes. Remove from the heat, drain any excess liquid, and set the filling aside.
  3. Prepare the tortillas: Wrap the corn tortillas in a damp paper towel and microwave for 1 minute, flipping halfway through, until they are warm and pliable. Keep them covered to prevent drying out while assembling the taquitos.
  4. Assemble the taquitos: Lay each tortilla flat and place a heaping tablespoon of the seasoned beef mixture in the center. Top with about a tablespoon of shredded cheese. Roll the tortilla tightly around the filling to form a taquito. Secure with toothpicks if needed. Repeat the process for all tortillas.
  5. Preheat the oven and prepare baking sheet: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking.
  6. Bake the taquitos: Place the rolled taquitos seam-side down on the prepared baking sheet, making sure they do not touch each other. Lightly spray or brush the tops with cooking spray or avocado oil to help crisp them. Bake for 15 to 20 minutes, or until they are golden brown and crispy.
  7. Serve: Carefully remove toothpicks if used. Plate the baked taquitos and serve with your choice of toppings such as shredded lettuce, diced tomatoes, sour cream, salsa, and guacamole.

Notes

  • You can substitute the homemade taco seasoning with 1 packet of store-bought taco seasoning for convenience.
  • For an alternative cooking method, you can fry the taquitos in 2 inches of oil at 350°F for 3-5 minutes until crisp and golden brown.
  • Taquitos can also be cooked in an air fryer at 400°F: air fry for 5 minutes, flip, spray with cooking spray, then air fry for an additional 2 minutes for a crispy finish.
  • To keep tortillas pliable, do not skip the step of warming them before assembling.
  • Remove toothpicks before serving to avoid any choking hazards.
