Oven-Baked Cabbage Burgers are a healthy and flavorful twist on traditional burgers, using roasted cabbage slices as a base instead of buns. Ingredients

Vegetables

  • 1 head of green cabbage, cut into 1-inch slices
  • 1/2 cup chopped green onion
  • 1/2 cup chopped parsley
  • 1 teaspoon grated garlic

Meat and Dairy

  • 1 pounds of lean ground beef
  • 1/2 cup shredded cheese (mozzarella, Monterey Jack), divided

  • 1/2 cup tomato sauce (or ketchup)
  • 1/2 teaspoon salt

Instructions

  1. Preheat and prepare cabbage: Preheat your oven to 400ºF (200ºC). Arrange the cabbage slices on a rimmed sheet pan. Brush a little oil on the cabbage slices and season them with salt and black pepper to enhance flavor and promote roasting.
  2. Roast cabbage slices: Roast the cabbage slices in the oven for about 10 minutes to partially cook them. This step helps soften the cabbage while preventing it from overcooking during the final baking with the beef patties.
  3. Prepare beef mixture: Meanwhile, in a large bowl, combine the lean ground beef with grated garlic, chopped green onion, parsley, red chili pepper flakes, half of the shredded cheese, salt, and pepper. Mix everything until fully incorporated, then divide the mixture into four equal-sized beef patties.
  4. Assemble burgers: Remove the cabbage from the oven. On each cabbage slice, spread about a tablespoon of tomato sauce, followed by a sprinkle of shredded cheese. Place one beef patty on top of each cabbage slice and then sprinkle the remaining cheese over the patties.
  5. Bake assembled burgers: Return the assembled cabbage burgers to the oven and bake for 10-12 minutes, or until the beef patties are cooked to your preferred doneness and the cheese is melted and bubbly.
