This Overnight Blueberry French Toast Casserole is a luscious, creamy breakfast bake that combines layers of cubed French bread with a rich cream cheese and blueberry mixture, soaked in a fragrant cinnamon and nutmeg egg custard. Perfect for an easy make-ahead dish, it bakes to a golden, soft, and flavorful casserole bursting with fresh blueberry goodness.

Ingredients

Cream Cheese Mixture

  • 1 pack (8 ounces) softened cream cheese
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 tablespoon vanilla extract, divided
  • 1 cup blueberries

Bread Layers

  • 2 loaves French bread, cubed (separated)

Egg Mixture

  • 2 cups milk
  • 8 eggs
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon ground nutmeg
  • 2 teaspoons vanilla extract
  • 1 cup blueberries

Instructions

  1. Prepare the Cream Cheese Mixture: In a bowl, combine the softened cream cheese, powdered sugar, 2 tablespoons of milk, and 1 teaspoon of vanilla extract. Mix until smooth and creamy. Gently fold in 1 cup of blueberries to evenly distribute them.
  2. Assemble the Bread Layers: In a 10×14-inch baking dish, layer half of the cubed French bread evenly at the bottom. Spread the cream cheese mixture evenly over this bread layer. Top with the remaining bread cubes.
  3. Prepare and Add the Egg Mixture: In a large bowl, whisk together 2 cups milk, 8 eggs, 2 teaspoons vanilla extract, cinnamon powder, and ground nutmeg until fully combined. Pour this mixture evenly over the layered bread in the baking dish, making sure all bread cubes are soaked. Sprinkle 1 cup of blueberries evenly on top. Cover tightly with aluminum foil and refrigerate for 8 hours or overnight.
  4. Preheat the Oven: About 30 to 60 minutes before baking, remove the casserole from the refrigerator. Preheat your oven to 375°F (190°C).
  5. Bake the Dish: Bake the covered casserole in the preheated oven for 45 minutes. Then remove the foil and continue baking for approximately 30 more minutes until the center is set and the top is lightly browned, totaling about 75 minutes baking time.
  6. Serve and Enjoy: After baking, let the casserole cool slightly. Serve warm and enjoy the creamy, blueberry-rich French toast casserole.

Notes

  • For best results, use day-old French bread to better absorb the custard.
  • You can substitute frozen blueberries if fresh are not available; thaw and drain them before use.
  • Letting the casserole rest at room temperature before baking ensures more even cooking.
  • This casserole can be made a day ahead and refrigerated until baking.
  • For a dairy-free option, substitute cream cheese and milk with vegan alternatives.
