This Pan-Roasted Swordfish recipe features perfectly seared swordfish fillets finished in the oven and topped with a flavorful garlic, parsley, and lemon butter mixture. A quick and elegant seafood dish ideal for a weeknight dinner or special occasion.

Ingredients

Fish:

  • 2 fillets swordfish (6-7 ounces each), fresh or thawed
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Topping:

  • 2 tablespoons parsley, finely chopped
  • 3 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon lemon peel, grated
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter, room temperature

Instructions

  1. Prepare the Topping: In a medium bowl, combine the parsley, minced garlic, crushed red pepper, grated lemon peel, lemon juice, and unsalted butter. Mix until well blended, then set aside to allow the flavors to meld.
  2. Season the Swordfish: Pat the swordfish fillets dry thoroughly using paper towels to remove excess moisture. Season both sides with salt and pepper evenly, which will help achieve a nice sear.
  3. Sear the Swordfish: Heat a large skillet over high heat and add 2 tablespoons of olive oil. Once the oil is hot and shimmering, carefully place the swordfish fillets into the skillet. Brown each side for 2 to 3 minutes until a golden crust forms.
  4. Roast in the Oven: Preheat your oven to 400 degrees F (200 degrees C). Transfer the skillet with the seared swordfish directly into the oven and roast for 8 to 10 minutes, or until the fish is cooked through and flakes easily with a fork.
  5. Finish and Serve: Remove the skillet from the oven and immediately top each swordfish fillet with half of the prepared butter mixture. Serve the swordfish hot for the best taste experience.

Notes

  • Patting the fish dry before searing is essential to get a good crust.
  • Use fresh swordfish fillets for best flavor and texture; if frozen, thaw completely before cooking.
  • The butter topping adds richness and a bright lemon-garlic flavor, enhancing the mild swordfish.
  • This dish pairs well with roasted vegetables or a light salad.
  • Adjust crushed red pepper to taste for desired spiciness.
