Delightful and bite-sized pancake poppers that are perfect for breakfast, brunch, or a fun snack. These mini pancakes are fluffy, subtly sweet, and easy to make, ideal for dipping or enjoying with your favorite syrup or toppings.

Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

For Cooking

  • Cooking spray or additional butter for greasing

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.
  2. Mix Wet Ingredients: In a separate bowl, whisk the milk, large egg, melted butter, and vanilla extract until the mixture is smooth and well blended.
  3. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix to keep the pancake poppers fluffy.
  4. Prepare Cooking Surface: Preheat a mini muffin pan or cake pop maker. Lightly grease it using cooking spray or butter to prevent sticking.
  5. Fill and Cook: Spoon the batter into the prepared pan, filling each cavity about two-thirds full. Bake or cook the poppers for 10 to 12 minutes, or until they turn golden brown and are cooked through.
  6. Serve Warm: Remove the pancake poppers from the pan and serve immediately with your favorite toppings or dips such as syrup, honey, fruit preserves, or yogurt.

Notes

  • Do not overmix the batter; lumps are okay to ensure fluffiness.
  • If you don’t have a mini muffin pan, a cake pop maker works perfectly.
  • Feel free to add chocolate chips or blueberries into the batter for extra flavor.
  • Serve with maple syrup, fresh fruits, or a dusting of powdered sugar for added sweetness.
  • Store leftovers in an airtight container and reheat in the microwave or toaster oven for best taste.
