Ingredients

For the meat stuffing:

  • 400 g (14 oz) ground meat
  • 1 onion, cut into cubes
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 hard-boiled egg, optional
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp oregano
  • ½ tsp thyme
  • Salt and pepper to taste

For the potatoes:

  • 5 large potatoes (about 500 g)
  • 2 eggs
  • ¼ cup all-purpose flour
  • Salt to taste
  • Oil for frying (canola oil recommended)

Instructions

  1. Prepare the potatoes: Peel and cut the potatoes into cubes. Boil them in salted water for 20 minutes until soft but not mushy. Drain and let them cool completely.
  2. Make the meat stuffing: Heat olive oil in a large pan over medium heat. Add onion and garlic and cook for 1 minute. Stir in tomato paste. Add ground meat and season with cumin, oregano, thyme, salt, and pepper. Cook for about 10 minutes until fully cooked. Crumble in the hard-boiled egg if using, mix well, and remove from heat.
  3. Mash the potatoes: Using a potato masher or fork, mash the cooled potatoes until smooth, leaving some small lumps for texture.
  4. Form the stuffed potato balls: Lay out plastic wrap and place about 4 tablespoons of mashed potatoes on it. Flatten into a circle, place 2 tablespoons of meat filling in the center, then carefully fold and seal the potato around the filling into a ball shape using the plastic wrap. Repeat for all the potatoes and chill in the fridge for at least 1 hour.
  5. Bread the papas rellenas: In a bowl, beat the eggs and add the flour, mixing well to create a batter. Dip each potato ball in the egg-flour mixture to coat evenly.
  6. Fry until golden: Heat enough oil in a saucepan or deep fryer to fully cover the potato balls. Fry them in batches until golden brown and crispy. Drain on paper towels to remove excess oil. Serve warm.

Notes

  • Ensure potatoes are cool before mashing to get the right texture for shaping.
  • The hard-boiled egg in the stuffing is optional but adds traditional flavor.
  • Use plastic wrap to make shaping easier and neater.
  • Keep the stuffed potato balls chilled before frying to help them hold their shape.
  • Canola oil is recommended for frying due to its neutral flavor and high smoke point.
