Papas rellenas are a traditional Colombian dish featuring mashed potato balls stuffed with a savory ground meat filling. These crispy, golden-fried potato pockets are flavored with aromatic spices like cumin, oregano, and thyme, and often include a delicious addition of hard-boiled egg in the filling. Perfect as a snack or appetizer, papas rellenas combine creamy mashed potatoes with a robust meat center, resulting in a comforting and satisfying treat.

Ingredients

For the Meat Stuffing:

  • 400 gr (14 oz) ground meat
  • 1 onion, cut into cubes
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 hard-boiled egg, optional
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp oregano
  • ½ tsp thyme
  • Salt and pepper to taste

For the Potatoes:

  • 5 large potatoes (about 500 gr)
  • 2 eggs
  • ¼ cup all-purpose flour
  • Salt to taste
  • Oil for frying (canola oil recommended)

Instructions

  1. Prepare the Potatoes: Peel and cut the potatoes into cubes. Boil them in salted water for about 20 minutes until tender but not mushy. Drain and let the potatoes cool completely to room temperature.
  2. Make the Meat Stuffing: Heat olive oil in a large pan over medium heat. Add the onions and garlic and sauté for about a minute until fragrant. Stir in the tomato paste and mix well. Add the ground meat, seasoning with cumin, oregano, thyme, salt, and pepper. Cook for approximately 10 minutes until the meat is fully cooked. Finally, crumble in the hard-boiled egg and mix thoroughly. Remove from heat and set aside.
  3. Mash the Potatoes: Using a potato masher or fork, mash the cooled potatoes until mostly smooth with a few small lumps remaining for texture.
  4. Form the Potato Balls: Lay out a piece of plastic wrap and scoop approximately 4 tablespoons of mashed potatoes onto it, flattening into a circular shape. Place about 2 tablespoons of the meat filling in the center. Fold the plastic wrap to help enclose the filling with the potato, forming a ball. Repeat this process for all the potatoes and meat mixture. Chill the formed balls in the refrigerator for at least 1 hour.
  5. Prepare for Frying: In a bowl, beat the eggs and then add the all-purpose flour. Mix until smooth to create a batter-like coating. Dip each potato ball into the egg and flour mixture to coat evenly.
  6. Fry the Papas Rellenas: In a deep saucepan or deep fryer, heat enough canola oil to fully submerge the potato balls. Fry the balls in batches until they turn golden brown and crispy, about 4-5 minutes per batch. Remove the fried balls and place them on paper towels to drain excess oil.
  7. Serve: Serve the papas rellenas warm as a delicious snack or appetizer.

Notes

  • Allow the mashed potatoes to cool completely before forming to prevent them from being too soft and falling apart.
  • The hard-boiled egg in the meat stuffing is optional but adds an authentic touch and extra texture.
  • Use plastic wrap to help handle sticky mashed potatoes easily when shaping the balls.
  • Make sure the oil is hot enough before frying to ensure a crispy exterior and prevent excessive oil absorption.
  • Leftover papas rellenas can be reheated in an oven to retain their crispiness rather than microwaving.
