This creamy and dairy-free Papaya Chia Pudding combines fresh ripe papaya with almond milk and chia seeds for a nutritious, refreshing, and naturally sweet treat. Enhanced with warm spices like cinnamon and cardamom and a hint of almond extract, this pudding makes a perfect grab-and-go breakfast, snack, or healthy dessert option. It’s easy to prepare, blending all ingredients quickly for a smooth texture and wholesome goodness.

Ingredients

Main Ingredients

  • ¼ cup chia seeds (black chia seeds preferred)
  • 1 cup almond milk
  • 2 cups ripe papaya, peeled and chopped
  • 1-2 tablespoons maple syrup (optional, depending on sweetness of papaya)
  • ½ teaspoon cinnamon powder
  • ¼ teaspoon cardamom powder
  • ⅛ teaspoon pinch of salt
  • ½ teaspoon almond extract

Instructions

  1. Combine Ingredients: Place the chia seeds, almond milk, chopped ripe papaya, cinnamon, cardamom, salt, and almond extract into a high-powered blender.
  2. Blend Mixture: Blend on high speed until all ingredients are fully incorporated and the chia seeds appear to be broken up, creating a creamy texture.
  3. Taste and Adjust Sweetness: Taste the pudding for sweetness; if it is not sweet enough, add 1-2 tablespoons of maple syrup and blend again briefly to mix well. If sweet enough, omit the maple syrup.
  4. Refrigerate to Set: Pour the blended pudding into serving containers and refrigerate for at least 2 hours or overnight to allow the chia seeds to fully expand and thicken the pudding.
  5. Serve: Serve chilled as a nourishing breakfast, snack, or dessert. Optionally, garnish with fresh fruit or nuts if desired.

Notes

  • Using ripe papaya reduces or eliminates the need for additional sweeteners.
  • Black chia seeds are used here, but white chia seeds work equally well.
  • Blending chia seeds helps create a smoother texture, but some prefer to blend partially and stir others in for more texture.
  • Ensure to refrigerate the pudding to let it thicken properly before serving.
  • Almond extract can be substituted with vanilla extract if preferred.
  • To keep it vegan and dairy-free, use plant-based almond milk.
