This Parmesan Crusted Cod is a delicious and easy-to-make dish featuring tender cod fillets topped with a crispy, flavorful mixture of parmesan cheese, panko breadcrumbs, and Italian seasonings. The cod is brushed with olive oil and lemon juice to keep it moist and add brightness, then baked to perfection at a high temperature for a flaky and savory meal perfect for any occasion.

Ingredients

Fish and Seasoning

  • 4 cod fillets, about 6 ounces each
  • 2 teaspoons olive oil
  • 1 lemon, zested & juiced
  • Salt and pepper to taste

Parmesan Crust

  • ⅓ cup parmesan cheese, grated
  • ⅓ cup panko breadcrumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and lightly spray a baking dish with cooking spray to prevent sticking.
  2. Zest Lemon: Zest the lemon carefully to gather the flavorful outer peel without the bitter white pith.
  3. Prepare Cod: Place the cod fillets on a plate and squeeze fresh lemon juice evenly over each piece to add flavor and keep the fish moist during cooking.
  4. Oil and Season Fish: Brush a thin coat of olive oil over the top of each fillet, ensuring the entire surface is covered so the crust will adhere well. Season the fillets with salt and pepper to taste.
  5. Make Crust Mixture: In a small bowl, combine the parmesan, panko breadcrumbs, Italian seasoning, garlic powder, and lemon zest, mixing well to distribute flavors evenly.
  6. Apply Crust: Carefully spread the parmesan-panko mixture over the top of each cod fillet, pressing lightly to ensure it sticks well. Alternatively, place the topping on a flat plate and gently press the fish onto it to coat.
  7. Bake Cod: Place the prepared cod fillets into the baking dish and bake in the preheated oven for 10-12 minutes until the fish turns opaque and flakes easily with a fork.
  8. Serve: Serve the parmesan crusted cod hot, garnished with additional lemon slices and parsley if desired. Enjoy your flavorful and crispy baked fish!

Notes

  • You can store any leftover Parmesan Crusted Cod in the refrigerator for up to 3 days in an airtight container. It is best enjoyed freshly baked, but can be reheated in the microwave for about 1 minute.
  • Freezing cooked cod is not recommended as it may turn mushy upon thawing and reheating.
