This Passionfruit Slice is a delightful dessert featuring a buttery shortbread base topped with a tangy passionfruit and lemon filling and finished with a glossy passionfruit jelly topping. It combines tropical flavors with a creamy texture, perfect for a refreshing treat or special occasion.

Ingredients

For the Easy Shortbread Base

  • 170 g unsalted butter, melted (¾ cup / 6oz)
  • ¾ cup desiccated coconut (65g / 2.3oz)
  • ½ cup caster sugar (superfine sugar) or white granulated sugar (100g / 3 ½oz)
  • 195 g plain flour (all purpose flour) (~7oz)

For the Filling

  • 1 tin sweetened condensed milk (395g / 14oz)
  • ¼ cup fresh lemon juice (60ml)
  • ¼ cup strained passionfruit pulp (60ml)

For the Topping

  • ½ cup strained passionfruit pulp (125ml)
  • 1 ½ teaspoons powdered gelatine
  • ¼ cup caster sugar (superfine sugar) or white granulated sugar (50g / 1.8oz)
  • ¼ cup cold water (60ml)
  • 1 teaspoon passionfruit seeds, optional

Instructions

  1. Prepare the Shortbread Base: Preheat the oven to 180C / 350F / 160C fan forced. Line an 8 inch square baking tin with baking paper. In a large bowl, combine the flour, desiccated coconut, caster sugar, and melted butter. Mix until well combined, then press the mixture evenly into the base of the prepared pan. Bake for 25 minutes until set and lightly golden.
  2. Make the Filling: In a bowl, whisk together the sweetened condensed milk, fresh lemon juice, and ¼ cup of strained passionfruit pulp. Pour this mixture evenly over the parbaked shortbread base. Return to the oven and bake for another 15 minutes until the filling is firm. Allow to cool for 10 minutes before adding the topping.
  3. Prepare the Passionfruit Topping: Place ½ cup of strained passionfruit pulp into a small saucepan and sprinkle the powdered gelatine evenly over the top. Let it sit for 5 minutes to soften. Turn the heat to low and stir gently until the gelatine completely dissolves, being careful not to let it boil. Add the caster sugar and stir until dissolved. Remove from heat, add the cold water and stir in 1 teaspoon of passionfruit seeds if using. Mix well.
  4. Assemble and Set: Carefully pour the passionfruit topping over the cooled slice, spreading evenly. Refrigerate for at least 2 hours until the topping is fully set. Once set, cut into squares and serve chilled.

Notes

  • For best results, weigh ingredients where measurements are given to ensure accuracy.
  • Do not boil the passionfruit topping mixture to prevent loss of flavor and to keep the gelatine effective.
  • You can omit the passionfruit seeds from the topping if you prefer a smoother texture.
  • Store the slice in the refrigerator and consume within 3 days for optimal freshness.
  • Use fresh lemon juice for the best citrus flavor in the filling.
