This Peanut Butter Chia Pudding is a creamy and keto-friendly dessert or breakfast option that combines the rich flavor of peanut butter with the nutritious chia seeds. Sweetened with a low-carb Swerve sweetener and almond milk, this pudding is perfect for those following a ketogenic lifestyle. An optional sugar-free berry sauce adds a delightful touch of natural fruitiness, mimicking a PB&J flavor combination without the extra carbs.

Ingredients

Pudding Ingredients

  • 2 ½ cups almond milk
  • ¼ cup chia seeds
  • 2 tablespoons peanut butter (no added sugar)
  • 2 tablespoons powdered peanut butter
  • ¼ cup Swerve sweetener

Berry Sauce (Optional)

  • 1 cup frozen berries (or fresh)
  • 3 tablespoons Swerve sweetener
  • 2 tablespoons water

Instructions

  1. Mix the peanut butter mixture: In a mixing bowl, whisk together the peanut butter, powdered peanut butter, Swerve sweetener, and almond milk until well incorporated and smooth.
  2. Add chia seeds: Stir in the chia seeds thoroughly to ensure they are evenly distributed in the liquid mixture.
  3. Refrigerate pudding: Spoon the mixture into 3 small containers or jelly jars. Refrigerate for at least 2 hours, stirring once after about an hour to prevent clumping, or mix well just before serving if not stirring earlier.
  4. Prepare berry sauce (optional): Combine the frozen or fresh berries, Swerve sweetener, and water in a small saucepan. Stir and simmer over medium heat until the berries break down and the sauce thickens. Use a fork or potato masher to break down the berries faster if desired.
  5. Cool and store berry sauce: Remove the sauce from heat and let it cool completely before serving. Store leftover sauce in an airtight container in the refrigerator.
  6. Serve: Enjoy the peanut butter chia pudding as is, or top it with the sugar-free berry sauce for a delicious PB&J effect. Store any leftover pudding in sealed containers in the refrigerator.

Notes

  • Used Aldi Simply Nature peanut butter and peanut butter powder for low-carb content; other brands of no-added-sugar peanut butter and powdered peanut butter can be used.
  • Swerve sweetener can be substituted with any preferred keto-friendly sweetener.
  • To enhance flavor and protein, consider adding cocoa powder, chocolate protein powder, keto-friendly chocolate chips, or banana protein powder.
  • Mix the chia seeds well after refrigeration if clumping occurs to maintain texture.
  • The recipe yields approximately 3 servings.
