Peanut Butter Marshmallow Squares are a decadent no-bake treat combining the richness of peanut butter and butterscotch with the chewy sweetness of rainbow marshmallows. Perfect for an easy dessert or snack, these squares set in the fridge for a delightful chewy bite with a smooth buttery base.

Ingredients

Base

  • 1/4 cup unsalted butter
  • 1 cup peanut butter
  • 1 bag (300g) butterscotch chips

Mix-in

  • 4-5 cups rainbow marshmallows

Instructions

  1. Prepare the Pan: Line an 8×8 or 9×9 inch pan with aluminum foil and lightly grease it to prevent sticking.
  2. Melt Ingredients: In a medium saucepan over low heat, melt together the butter, peanut butter, and butterscotch chips. Stir occasionally until the mixture becomes smooth and well combined.
  3. Cool Mixture: Remove the saucepan from heat and allow the mixture to cool to room temperature to avoid melting the marshmallows when added.
  4. Add Marshmallows: Stir in the 4 to 5 cups of rainbow marshmallows gently until they are fully coated with the peanut butter and butterscotch mixture.
  5. Set in Pan: Pour the marshmallow batter into the prepared pan, spreading it evenly.
  6. Chill to Harden: Place the pan in the refrigerator and allow the squares to set and harden for about 1 to 2 hours before serving.
