These Peanut Butter Oat Cups are a delicious no-bake treat combining creamy peanut butter, wholesome oats, and a rich chocolate coating. Perfect for a quick snack or an on-the-go energy boost, they feature a customizable filling—either plain peanut butter or a protein-packed blend. The cups are frozen to set and finished with a sprinkle of flaky sea salt for that perfect sweet and salty balance.

Ingredients

Oat Base

  • 2/3 cup peanut butter
  • 3/4 cup old fashioned (rolled) oats
  • 2 tbsp maple syrup

Regular Filling

  • 1 tbsp peanut butter (per oat cup)

Protein Filling (Optional)

  • 1/2 cup peanut butter
  • 3 tbsp protein powder

Chocolate Coating

  • 1 cup chocolate chips (melted)
  • 2 tsp oil (for melting chocolate)
  • Flaky sea salt (optional, for garnish)

Instructions

  1. Prepare the oat base: In a mixing bowl, combine 2/3 cup peanut butter with 2 tablespoons maple syrup. Stir until well blended and smooth.
  2. Add oats to mixture: Add 3/4 cup rolled oats into the peanut butter and maple syrup mixture. Mix thoroughly until the oats are evenly coated and fully incorporated.
  3. Form the base cups: Using a cookie scoop (about 2 tablespoons per scoop), portion the oat mixture into silicon molds. Press down each portion firmly with a spoon to create an even, compact base layer.
  4. Add the filling: For each oat cup, add a dollop of 1 tablespoon peanut butter on top for the regular filling. Alternatively, mix 1/2 cup peanut butter with 3 tablespoons protein powder for a protein-packed filling and spread this mixture evenly on top of each base.
  5. Freeze the cups initially: Place the oat cups in the freezer for 20 minutes to set the base and filling.
  6. Melt the chocolate: While the cups freeze, melt 1 cup of chocolate chips with about 2 teaspoons of oil in the microwave. Heat in 30-second increments, stirring well after each to ensure a smooth, even melt.
  7. Coat with chocolate: Remove the oat cups from the freezer and spoon the melted chocolate over the tops evenly.
  8. Final freeze: Return the coated oat cups to the freezer for another 20 minutes to allow the chocolate to harden completely.
  9. Serve: Once set, carefully remove the oat cups from the silicon liners. Optionally, sprinkle the tops with flaky sea salt for enhanced flavor. Enjoy chilled!

Notes

  • Mix the maple syrup and peanut butter thoroughly before adding oats to ensure even texture.
  • Use silicon liners or molds for easy removal and best shape retention.
  • If using creamy, runny peanut butter, increase freezing time as the base and filling take longer to set.
  • Melt chocolate slowly in the microwave in 30-second bursts and stir well to avoid burning.
  • A cookie scoop helps portion the oat mixture evenly for uniform-sized cups.
  • Flaky sea salt adds a delightful contrast to the sweet chocolate and peanut butter.
