Ingredients

Protein & Vegetables

  • 3 tablespoons vegetable oil, divided
  • 1-1/2 lbs boneless skinless chicken breasts, cut into 1-inch strips
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups broccoli florets
  • 1-1/2 cups snow peas
  • 1 medium sweet pepper, thinly sliced

Sauce

  • 1/3 cup peanut butter
  • 1/3 cup soy sauce
  • 2 tablespoons white vinegar
  • 1/3 cup coconut sugar (or brown sugar)
  • 1 tablespoon cornstarch mixed with 1 tablespoon water

Finishing & Seasoning

  • 2 tablespoons minced fresh parsley
  • Salt and pepper to taste
  • Hot rice for serving

Instructions

  1. Sauté Chicken and Onions: In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering. Add the chicken strips and sliced onion, sautéing for several minutes until the chicken is cooked through and no longer pink.
  2. Add Garlic: Stir in the minced garlic and cook for an additional minute until fragrant, being careful not to let it burn. Transfer the chicken and onion mixture to a bowl and set aside.
  3. Sauté Vegetables: In the same skillet, heat the remaining 1 tablespoon of oil over medium-high heat until shimmering. Add broccoli florets, snow peas, and sliced sweet pepper. Stir-fry for 5 to 8 minutes until the vegetables are crisp-tender.
  4. Combine Chicken and Vegetables: Return the cooked chicken and onion mixture back to the skillet with the vegetables. Reduce the heat to medium-low to prepare for the sauce addition.
  5. Prepare and Add Sauce: In a small bowl, whisk together the peanut butter, soy sauce, white vinegar, coconut sugar, and cornstarch-water mixture until smooth. Pour the sauce into the skillet, stirring it into the chicken and vegetables. Cook over medium-low heat, stirring occasionally, until the sauce thickens and becomes bubbly.
  6. Finish and Serve: Stir in the minced fresh parsley, and season with salt and pepper to taste. Serve the peanut satay chicken hot over freshly cooked rice for a complete and satisfying meal. Enjoy!

Notes

  • For a spicier version, add red pepper flakes or a dash of chili sauce to the peanut sauce.
  • Substitute chicken breasts with chicken thighs for a juicier texture.
  • Use natural peanut butter without added sugar to reduce sweetness if desired.
  • Snow peas can be replaced with sugar snap peas or green beans.
  • Prepare rice ahead of time or use leftover rice to save time.
