Ingredients

Tofu and Rice

  • 14 oz extra-firm tofu
  • 1 cup jasmine rice
  • 1 can coconut milk (about 13.5 oz)
  • Water as needed (approximately 1 cup)

Peanut Sauce

  • 1/3 cup peanut butter
  • 3 tbsp soy sauce
  • 1 tbsp maple syrup
  • 2 cloves garlic, minced
  • 1 tbsp fresh lime juice

Instructions

  1. Press the tofu: Place the extra-firm tofu between paper towels and set a heavy object on top for 15 minutes to remove excess moisture for better crispiness.
  2. Rinse the rice: Rinse the jasmine rice under cold water in a fine mesh strainer until the water runs clear to remove excess starch and prevent clumping.
  3. Cook the rice: In a saucepan, combine rinsed rice, one can of coconut milk, and approximately 1 cup of water. Bring to a simmer, cover, and cook gently for about 15 minutes or until the rice is tender and liquid is absorbed.
  4. Cube and cook tofu: Cut the pressed tofu into cubes. Heat a lightly oiled skillet over medium heat and cook the tofu cubes until golden brown and crispy on all sides, about 5-7 minutes.
  5. Prepare the peanut sauce: In a bowl, whisk together peanut butter, soy sauce, maple syrup, minced garlic, and fresh lime juice until smooth and well combined.
  6. Combine tofu with sauce: Pour the prepared peanut sauce over the cooked tofu in the skillet. Cook together for 2 to 3 minutes to allow the tofu to absorb the flavors and the sauce to thicken slightly.
  7. Serve: Fluff the coconut rice with a fork and plate it. Top with the sauced tofu cubes and serve immediately.

  • Swap jasmine rice for brown rice if you prefer a whole grain option with more fiber.
