Ingredients

Pastry

  • Cooking spray, for greasing pans
  • 1 (14-oz.) package puff pastry, thawed if frozen

Filling

  • 1 (8-oz.) block cold cream cheese
  • 1/2 cup pepper jelly
  • Fresh thyme leaves, for serving (optional)

Instructions

  1. Preheat and prepare pans: Preheat your oven to 375°F (190°C). Grease two 24-cup mini muffin pans thoroughly with cooking spray to prevent sticking.
  2. Cut and place puff pastry: On a clean, flat surface, unfold the thawed puff pastry and cut it into 24 equal pieces. Place each piece gently into the prepared muffin cups, forming little pastry shells.
  3. Bake initial puff pastry: Bake these pastry shells in the preheated oven for about 12 minutes or until they become lightly golden and puffed. Remove from oven and allow them to cool slightly.
  4. Add cream cheese and pepper jelly: Cut the cold block of cream cheese into 24 equal pieces. Press one piece of cream cheese into the center of each pastry shell, carefully separating the pastry in the center if needed to make room. Then top each cream cheese piece with about one heaping teaspoon of pepper jelly.
  5. Finish baking: Return the filled pastries to the oven and bake for an additional 8 to 10 minutes, until the puff pastry is golden brown and the cream cheese is warmed through.
  6. Garnish and serve: Optionally, sprinkle fresh thyme leaves on top for added aroma and presentation. Allow the bites to cool for around 10 minutes before serving to let flavors meld and avoid burning yourself.

Notes

  • Use cold cream cheese to help it hold its shape better inside the pastry.
  • Make sure the puff pastry is properly thawed to avoid tearing when cutting and placing.
  • Fresh thyme is optional but adds a lovely herbal note and visual appeal.
  • These bites are best served warm but can be reheated gently in the oven if needed.
  • Double the recipe and bake in batches for larger gatherings.
