This Pineapple Chipotle Salsa is a vibrant and smoky condiment perfect for adding a sweet and spicy kick to your dishes. Made by broiling fresh tomatillos, garlic, onion, and pineapple until lightly charred, then blended with chipotle peppers and seasoned with kosher salt, this salsa offers a chunky texture and deep flavor that enhances tacos, grilled meats, or chips.

Ingredients

Produce

  • 7-8 tomatillos, husks removed and sliced in half
  • 4 garlic cloves, whole
  • 2 thick slices onion (about 1/2-inch thick each; white onion preferred but yellow, Vidalia, or red are acceptable)
  • 2 slices fresh pineapple, cored (or 2 rings canned pineapple, patted dry)

Pantry

  • 1 or 2 chipotle peppers in adobo
  • 1 teaspoon kosher salt (optional, plus more to taste)

Instructions

  1. Preheat the broiler: Set your oven to the high broiler setting and position a rack on the top level. Line a baking sheet with foil for easier cleanup.
  2. Broil ingredients first side: Arrange tomatillos, whole garlic cloves, onion slices, and pineapple on the baking sheet. Broil on high for 10 minutes to develop charred, smoky flavors.
  3. Flip and broil second side: Carefully remove the baking sheet, flip all the ingredients to the other side, then return to the oven to broil for an additional 5 minutes. Watch closely as broilers can vary, and the ingredients can quickly burn.
  4. Blend the salsa: Transfer all the charred ingredients to a high-speed blender or food processor. Add the chipotle peppers in adobo and kosher salt. Pulse or blend briefly until a chunky consistency is reached. Avoid over-blending for texture.
  5. Adjust and serve: Taste the salsa and add more salt if desired. Stir to combine and serve immediately, or refrigerate to let the flavors meld.

Notes

  • White onion is preferred for this salsa, but yellow, Vidalia, or red onions can be used as substitutes.
  • Do not over-blend the salsa; keeping it chunky maintains great texture.
  • Store salsa airtight in the refrigerator for up to 1 week. The flavors improve as it sits.
