A refreshing Pineapple Kiwi Salad featuring juicy pineapple and sweet kiwi tossed with fresh mint, lime-honey dressing, and topped with toasted shredded coconut for a delightful crunch. Perfect as a light, healthy snack or a vibrant side dish.

Ingredients

Fruit

  • 1 large fresh pineapple
  • 4 kiwis
  • 8-10 fresh mint leaves

Dressing

  • 2 limes (zested and juiced)
  • 2 tablespoons honey

Topping

  • ¼ cup shredded coconut

Instructions

  1. Toast the Coconut: In a skillet over medium-low heat, add the shredded coconut. Cook while stirring frequently until the coconut is lightly browned and fragrant, about 3-5 minutes. Remove from heat and set aside to cool.
  2. Prepare the Fruit: Peel and cube the pineapple, placing it into a large bowl. Slice each kiwi in half, then use a spoon to scoop out the flesh from the peel. Slice the kiwi flesh into bite-sized pieces and add to the bowl with pineapple. Roll up the mint leaves tightly and slice thinly (julienne), then add to the fruit bowl.
  3. Make the Dressing: In a separate small bowl, zest and juice both limes. Add the honey to the lime juice and zest, and whisk together until well combined.
  4. Toss the Salad: Pour the lime-honey dressing over the fruit and mint mixture. Toss gently to coat all the fruit evenly with the dressing.
  5. Chill: Cover the fruit salad and store it in the refrigerator until ready to serve to let the flavors meld.
  6. Add Toasted Coconut: Just before serving, sprinkle the toasted shredded coconut over the top of the fruit salad for added texture and flavor.

Notes

  • Coconut: Shredded coconut can be sweetened or unsweetened depending on your preference.
  • Make ahead: The fruit salad can be prepared a day ahead and kept in a sealed container refrigerated until serving. Store toasted shredded coconut separately at room temperature up to one month and add just before serving to maintain crunchiness.
  • Storage: The prepared fruit salad will keep fresh in the refrigerator for up to 3 days.
