Ingredients

For greasing the molds:

  • Flour, for dusting
  • Butter, for greasing

For the cakes:

  • ⅓ cup (80 g) Pistachio paste
  • 80 g White chocolate
  • 5 tablespoons (75 g) Butter
  • 2 Large eggs (or 2 medium eggs + 1 egg yolk)
  • 3 tablespoons (36 g) Sugar
  • 3 tablespoons (22 g) Flour
  • Pinch of salt
  • Pistachios, chopped, for decoration

Instructions

  1. Prepare the molds: Preheat your oven to 350°F (180°C). Generously butter 6-ounce molds or ramekins, then dust them evenly with flour. Place the prepared molds in the fridge for about 10 minutes to set the butter coating, ensuring easy cake release later.
  2. Melt chocolate mixture: In a heatproof bowl, combine the white chocolate, butter, and pistachio paste. Set this bowl over a double boiler — a pot of simmering water — and gently heat, stirring occasionally until the mixture is completely melted and smooth. Remove from heat and let it cool slightly to avoid cooking the eggs in the next step.
  3. Whisk eggs and sugar: In a separate mixing bowl, whisk together the eggs, sugar, and a pinch of salt until the mixture becomes light, pale, and thick. This aerates the batter, contributing to a tender crumb.
  4. Incorporate flour: Sift the flour into the egg mixture. Gently whisk until just combined, being careful not to overmix which can toughen the cakes.
  5. Combine mixtures: Gradually pour the melted chocolate, pistachio, and butter mixture into the egg-flour batter, stirring continuously until fully incorporated and smooth.
  6. Fill molds and bake: Evenly divide the batter among the prepared molds. Bake for 8 to 12 minutes, or until the edges are set and firm but the center remains soft and slightly jiggly.
  7. Cool and serve: Allow the cakes to stand for 1 minute after removing from the oven. Then carefully invert each cake onto a plate while still warm. Dust with powdered sugar and garnish with chopped pistachios for a beautiful presentation. Serve immediately for the best molten lava texture.

  • Use fresh and good quality pistachio paste for the best flavor.
  • If you don’t have pistachio paste, finely ground roasted pistachios mixed with a little bit of oil can be a substitute.
