Instructions

  1. Preheat and prepare the pan: Preheat your oven to 375°F (190°C). Generously grease a bundt pan or springform pan with butter or nonstick spray to ensure the potato wreath releases easily after baking.
  2. Slice the potatoes: Peel and thinly slice the Yukon Gold and sweet potatoes into ⅛ inch or thinner slices using a mandoline or sharp knife. Soak the slices in cold water to prevent browning, then dry them thoroughly with a clean towel or paper towels.
  3. Make the cream sauce: In a saucepan over medium heat, combine the heavy cream, minced garlic, fresh thyme sprigs, and unsalted butter. Heat gently for 3–4 minutes without boiling to infuse flavors. Once done, remove the thyme sprigs and set the cream sauce aside.
  4. Assemble the wreath: Arrange the potato slices vertically in the prepared pan, slightly overlapping each slice. Alternate between Yukon Gold and sweet potatoes to create a consistent and visually appealing color pattern.
  5. Add cheese and cream sauce: Sprinkle shredded Gruyère cheese between layers of potatoes as you build the wreath. Slowly pour half of the infused cream sauce evenly over the potatoes.
