It’s an impressive yet comforting dish perfect for autumn gatherings or festive dinners, featuring rich flavors of pumpkin, Parmesan, and garlic topped with crunchy pumpkin seeds and fresh parsley for a beautiful presentation.

Ingredients

For the Pumpkin Cauldrons

  • 6 to 8 mini pumpkins (edible varieties like Jack Be Little or sweet dumpling)
  • Olive oil, for brushing
  • Salt, to taste
  • Black pepper, to taste

For the Pasta and Alfredo Sauce

  • 12 ounces fettuccine or spaghetti
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste
  • Optional: pinch of nutmeg

For Garnish

  • Chopped fresh parsley
  • Pumpkin seeds (pepitas)
  • Extra grated Parmesan cheese

Instructions

  1. Preheat and Prepare Pumpkins: Preheat your oven to 375°F (190°C). Slice off the tops of the mini pumpkins and carefully scoop out the seeds and flesh to create hollow cauldrons. Brush the inside lightly with olive oil and season with salt and pepper.
  2. Roast Pumpkins: Place the pumpkins cut-side up on a baking sheet and roast for 25–30 minutes until the pumpkin flesh is tender but still holds its shape.
  3. Cook Pasta: While the pumpkins roast, cook the fettuccine or spaghetti in salted boiling water according to the package instructions until al dente. Drain and set aside.
  4. Make Alfredo Sauce: In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant but not browned, about 1-2 minutes. Pour in the heavy cream and bring to a gentle simmer. Stir in the freshly grated Parmesan cheese until melted and smooth. Season the sauce with salt, pepper, and optional nutmeg. Continue to simmer until thickened to a creamy consistency.
  5. Toss Pasta with Sauce: Add the drained pasta to the Alfredo sauce and toss well until the noodles are fully coated.
  6. Assemble Cauldrons: Carefully fill each roasted mini pumpkin with the creamy pasta, twirling it to create a nest-like presentation.
  7. Garnish and Serve: Top each pasta-filled pumpkin with chopped parsley, a sprinkle of pumpkin seeds, and extra grated Parmesan cheese. Serve warm, enjoying the rich flavors and festive pumpkin vessels.

Notes

  • Use edible mini pumpkins such as Jack Be Little or sweet dumpling varieties for safety and flavor.
  • You can prepare the roasted pumpkins and Alfredo sauce ahead of time to save on serving day.
  • For a lighter version, substitute half-and-half for the heavy cream.
  • Make this recipe vegan by using plant-based butter, cream alternatives, and dairy-free Parmesan-style cheese.
