Ingredients

Puppy Chow Mixture

  • 4 cups rice Chex cereal
  • 1 cup peanut butter
  • 1/3 cup powdered sugar

Coating

  • 2 cups semi-sweet chocolate chips
  • 1/2 cup powdered sugar

Instructions

  1. Prepare peanut butter mixture: Combine the peanut butter and 1/3 cup powdered sugar in a microwave-safe bowl. Heat in 10-second intervals, stirring between each, until the mixture is fully melted and smooth.
  2. Prep the cereal: Place the rice Chex cereal in a large bowl and gently crush it into small pieces, leaving some larger pieces for texture.
  3. Mix cereal with peanut butter: Pour the melted peanut butter mixture over the crushed cereal and stir well to combine. Refrigerate the mixture for about 30 minutes to chill and firm up.
  4. Melt chocolate: Using a double boiler, melt the semi-sweet chocolate chips until smooth and creamy.
  5. Shape truffles: Remove the cereal mixture from the refrigerator and roll it into approximately 1 1/2 tablespoon-sized balls. You should be able to make about 18 truffles.
  6. Coat with chocolate: Dip each ball into the melted chocolate to fully coat it. Place the coated truffles on a tray and refrigerate until the chocolate hardens.
  7. Coat with powdered sugar: Place 1/2 cup powdered sugar in a bowl. Once the chocolate coating has hardened, roll each truffle in the powdered sugar for a sweet finishing touch.
  8. Serve and enjoy: The Puppy Chow Chocolate Truffles are now ready to be enjoyed as a crunchy, creamy, and sweet treat perfect for sharing or gifting.

Notes

  • Use creamy peanut butter for the smoothest texture when melting.
  • Be careful not to overheat the peanut butter mixture; stir often to avoid burning.
  • Crushing the cereal into varied sizes adds a nice crunchy texture, so don’t pulverize it entirely.
  • If you don’t have a double boiler, melt the chocolate chips in short bursts in the microwave, stirring frequently.
  • Store the truffles in an airtight container in the refrigerator for up to one week.
  • These make an excellent homemade gift wrapped in festive bags or boxes.
