A vibrant and creamy beet pasta dish combining roasted beets, cottage cheese, and Parmesan for a quick, flavorful meal with a distinctive pink hue. Garlic-infused olive oil adds depth, while optional parsley garnish and toasted walnuts provide freshness and crunch. Perfect for an easy yet visually stunning pasta plate.

Ingredients

Pasta

  • 1 pound (453.59 g) pasta (any kind including whole wheat, gluten free, or bean-based)

Sauce

  • 2 Tablespoons (28 g) extra virgin olive oil
  • 3 cloves garlic, thinly sliced (or 1 teaspoon garlic powder as substitute)
  • 6-8 ounces (170.1 g) cooked and peeled beets (roasted recommended)
  • 1 cup (210 g) reduced fat cottage cheese
  • ⅔ cup (66.67 g) grated Parmesan cheese, plus extra for serving
  • ¾ teaspoon (4.5 g) kosher salt
  • ¼ teaspoon (0.5 g) ground black pepper
  • Finely chopped parsley, optional garnish
  • Optional toppings: toasted chopped walnuts

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and return it to the pot.
  2. Prepare Garlic Oil: Heat a pan over medium-low heat. Add olive oil and, once hot, add thinly sliced garlic. Cook gently until the garlic is golden brown, about 1-2 minutes. Remove from heat and set aside. (If using garlic powder, skip this step and add garlic powder directly to the blender with oil.)
  3. Make Beet Sauce: In a blender, combine cooked beets, cottage cheese, Parmesan cheese, kosher salt, black pepper, ½ cup pasta cooking water, and the toasted garlic with olive oil. Blend until smooth and creamy.
  4. Toss Pasta with Sauce: Pour the beet sauce over the cooked pasta in the pot. Stir thoroughly to coat the pasta evenly. If the pasta has cooled, gently warm over low heat, adding a splash or two of reserved pasta water to adjust sauce consistency as needed.
  5. Serve: Plate the creamy beet pasta, topping with extra Parmesan cheese and garnish with finely chopped parsley and toasted walnuts if desired. Serve immediately.

Notes

  • Roasting beets is recommended for the best flavor and vibrant color, but precooked or canned beets can be used in a pinch.
  • Any pasta type works well, including whole wheat, gluten-free, or bean-based varieties.
  • Garlic preparation can be varied: roast whole garlic with beets and add cloves to sauce, use raw garlic cloves blended in, or substitute garlic powder for speed.
  • Ricotta cheese can be substituted for cottage cheese to alter texture and flavor.
  • Adding toasted chopped walnuts on top introduces a delightful crunchy contrast.
