These Quick & Easy Salmon Kabobs are a flavorful, healthy, and vibrant dish perfect for grilling. Tender salmon pieces marinated in fresh homemade pesto, paired with thinly sliced lemon rounds, create a refreshing and zesty flavor that is perfect for a quick weeknight dinner or weekend cookout.

Ingredients

Equipment

  • (10-inch) bamboo skewers or wooden skewers

Marinade

  • 1/2 cup fresh pesto sauce (see recipe at cleanfoodcrush.com)
  • sea salt, to taste
  • ground pepper, to taste
  • 1/2 tsp crushed red pepper flakes

Main Ingredients

  • 1-1/2 lbs. skinless salmon filet, cut into 1-1/4-inch pieces
  • 2 fresh lemons, very thinly sliced into rounds

Instructions

  1. Soak Skewers: Soak the wooden or bamboo skewers in water for at least 20 minutes to prevent them from burning on the grill.
  2. Marinate Salmon: In a large bowl, toss the salmon pieces with the fresh pesto sauce until well coated. Season with sea salt, ground pepper, and crushed red pepper flakes. Cover the bowl and refrigerate to marinate for 20 minutes.
  3. Assemble Kabobs: Thread the marinated salmon pieces onto the skewers, alternating with thin lemon slices for added flavor and visual appeal.
  4. Preheat Grill: Preheat your outdoor grill or indoor grill pan to medium heat to ensure even cooking.
  5. Grill Kabobs: Place the salmon kabobs on the grill and cook for a total of 6-8 minutes, flipping once halfway through, until the salmon is cooked through and has nice grill marks.

Notes

  • Soaking the skewers prevents them from burning while grilling.
  • For best flavor, use fresh homemade pesto with basil, garlic, pine nuts, Parmesan, and olive oil.
  • Make sure to cut salmon into uniform pieces to ensure even cooking.
  • The lemon slices add brightness and can be eaten or removed before serving.
  • If grilling indoors, use a grill pan and cook similar timing for best results.
  • You can adjust the crushed red pepper flakes amount based on your preferred spice level.
