Raspberry Magic Cookie Bars are a delightful twist on the classic 7-layer bars, featuring a sweet raspberry jam layer combined with lemon zest for a bright, fruity flavor. These bars offer a delicious mix of textures with a shortbread cookie crust, shredded coconut, macadamia nuts, rich sweetened condensed milk, and creamy white chocolate chips, baked to a golden perfection.

Ingredients

Crust

  • 1 ½ boxes (15 oz total) Shortbread cookies
  • ½ cup (113g) Unsalted butter, melted

Filling and Toppings

  • 1 cup (320g) Seedless raspberry jam
  • 1 can (14 oz) Sweetened condensed milk
  • ¾ cup (84g) Macadamia nuts, chopped
  • 1 cup (120g) Sweetened shredded coconut
  • ¾ cup (168g) White chocolate chips
  • 1 large lemon, zested

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line the bottom of a 9×13 inch baking pan with parchment paper to prevent sticking and allow easy removal of the bars.
  2. Make the Crust: Using a food processor or blender, grind the shortbread cookies into fine crumbs. In a medium bowl, combine the cookie crumbs with the melted unsalted butter and mix well. Press this mixture firmly and evenly into the bottom of the prepared pan. Place the crust in the freezer for 15 minutes to set.
  3. Spread Raspberry Jam: Dollop the seedless raspberry jam evenly over the chilled cookie crust. Use a knife or spatula to spread it gently and uniformly across the crust surface.
  4. Add Layers of Toppings: Sprinkle the shredded coconut, white chocolate chips, and chopped macadamia nuts over the raspberry jam layer. Reserve a small amount of each ingredient (about 1-2 tablespoons) to top the bars later.
  5. Pour Sweetened Condensed Milk and Finish Topping: Drizzle the entire can of sweetened condensed milk evenly over the layered ingredients. Then sprinkle the reserved shredded coconut, white chocolate chips, and macadamia nuts on top. Finally, zest the whole lemon evenly over the surface for a fresh citrus aroma and flavor.
  6. Bake: Place the pan in the preheated oven and bake for 25 to 28 minutes, or until the top turns golden brown and bubbly.
  7. Cool and Chill: Remove the bars from the oven and allow to cool completely in the pan on a wire rack. Once cooled, refrigerate the bars before slicing to help them set properly and hold their shape when cut.

Notes

  • Storing: Store the bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to 7 days. To prevent sticking, place a sheet of parchment paper between layers if stacking.
  • Freezing: Once chilled and sliced, you can freeze the bars in an airtight container for up to 3 months. Use parchment paper between layers to keep them from sticking together.
