Delightfully soft and flavorful Raspberry Sugar Cookies made with real freeze-dried raspberries, blending a tangy berry punch with classic sweet cookie goodness. These cookies are enhanced with a creamy butter and cream cheese base, subtly flavored with vanilla and almond extracts, and optionally topped with luscious melted chocolate and extra raspberry powder for an elegant finish.

Ingredients

For the Cookies:

  • 2 cups freeze-dried raspberries, divided
  • 3 cups all-purpose flour (spooned and leveled)
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon almond extract (optional)

For the Chocolate Topping (Optional):

  • 4 oz semi-sweet or white chocolate, chopped
  • Extra freeze-dried raspberry powder for garnish

Instructions

  1. Prepare Raspberry Powder and Chunks: Crush 1½ cups of freeze-dried raspberries into a fine powder using a food processor or mortar and pestle, then coarsely chop the remaining ½ cup for texture. Set both aside for later use.
  2. Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper to prevent sticking and ensure even baking.
  3. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until evenly combined, forming the dry mixture.
  4. Cream Butter and Cream Cheese: Using an electric mixer, cream the softened butter and cream cheese together on medium speed for about 2 minutes until the mixture becomes light and fluffy, creating a smooth base.
  5. Add Sugar: Incorporate the granulated sugar into the butter-cream cheese mixture and beat for another 2 minutes until the mixture is well combined, creamy, and aerated.
  6. Incorporate Egg and Extracts: Beat in the egg, vanilla extract, and almond extract (if using) just until combined. Avoid overmixing to keep the dough tender.
  7. Combine Wet and Dry Ingredients: Gradually add the flour mixture to the wet ingredients while mixing on low speed. Mix just until a soft dough forms, taking care not to overwork it.
  8. Fold in Raspberry Powder and Chunks: Gently fold in the raspberry powder and chopped raspberry pieces by hand using a wooden spoon, ensuring even distribution without overmixing.
  9. Scoop Dough onto Baking Sheets: Using a cookie scoop or tablespoon, drop rounded portions of dough onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.
  10. Bake the Cookies: Bake for 11-13 minutes, or until edges are set but centers appear slightly underbaked. This ensures a soft, chewy texture as the cookies finish cooking on the hot pan.
  11. Cool Cookies: Let the cookies cool on the baking sheet for 5 minutes to firm up, then transfer them to a wire rack to cool completely.
  12. Optional Chocolate Topping: Melt the chopped semi-sweet or white chocolate in 30-second intervals in the microwave, stirring between each interval until smooth. Drizzle the melted chocolate over cooled cookies and sprinkle with extra freeze-dried raspberry powder for garnish.

Notes

  • Softened butter and cream cheese should be at room temperature to easily cream together and create a smooth dough.
  • Do not overmix the dough once the flour is added to avoid tough cookies.
  • Cookies look slightly underbaked when removed; they will firm up as they cool for the perfect chewy texture.
  • Freeze-dried raspberries add real fruit flavor without moisture, keeping the cookies tender but flavorful.
  • The almond extract is optional but adds a lovely depth to the cookie’s flavor.
  • The chocolate topping is optional but highly recommended for a decadent finish.
  • Store cookies in an airtight container at room temperature for up to 5 days.
