Delight in the rich and creamy Raspberry Swirl Fudge, a decadent no-bake treat that combines smooth dark chocolate, natural peanut butter, and fresh raspberry swirls for a perfect balance of tart and sweet flavors. This simple yet elegant fudge is easy to prepare and ideal for a quick dessert or gift.

Ingredients

Fudge Base

  • 1 cup dark chocolate chips or a bar, chopped
  • 1 tsp. unrefined organic coconut oil
  • 1/2 cup all-natural peanut butter, or any nut or seed butter of your choice

Raspberry Swirl

  • 1 cup fresh raspberries

Optional Topping

  • Flaky sea salt for topping

Instructions

  1. Prepare Pan: Line a loaf pan with parchment paper to ensure easy removal of the fudge once set.
  2. Cook Raspberries: In a small saucepan over medium heat, add the fresh raspberries. Lightly smash them with a fork, stir, and bring to a low simmer. Continue simmering for about five minutes to soften and release juices, then remove from heat and set aside.
  3. Melt Chocolate: Fill a medium saucepan with water and bring to a brisk simmer over medium heat. Reduce heat to low. Place a heat-safe bowl on top of the saucepan, ensuring the bowl does not touch the water for a double boiler setup. Add the dark chocolate chips or chopped chocolate and coconut oil to the bowl and whisk frequently until fully melted and smooth.
  4. Combine with Peanut Butter: Stir in the peanut butter (or your preferred nut/seed butter) into the melted chocolate mixture. Whisk until the mixture is smooth and fully combined.
  5. Assemble Fudge: Pour the melted chocolate and peanut butter mixture into the prepared loaf pan, smoothing the surface evenly.
  6. Add Raspberry Swirl: Spoon dollops of the mashed raspberries over the chocolate mixture in the pan. Using a toothpick, gently swirl the raspberries into the fudge mixture to create a marbled effect.
  7. Optional Topping: If desired, sprinkle a light dusting of flaky sea salt over the top to enhance the flavor.
  8. Chill: Refrigerate the fudge for at least two hours until fully set and firm.
  9. Serve and Store: Cut into small squares before serving. Leftovers should be wrapped tightly and stored in the refrigerator for up to one week or frozen for up to two months.

Notes

  • Use smooth, all-natural peanut butter or nut/seed butter to ensure easy mixing and creamy texture.
  • Ensure the double boiler bowl doesn’t touch the simmering water to prevent burning the chocolate.
  • Fresh raspberries add natural tartness, but frozen raspberries can be used; thaw and drain excess liquid before use.
  • Flaky sea salt is optional but highly recommended to balance the sweetness and enhance flavor complexity.
  • For a nut-free version, substitute peanut butter with sunflower seed butter or tahini.
  • Store fudge tightly wrapped to prevent it from absorbing fridge odors and keep texture firm.
