These Reuben Bowls offer a flavorful and quick meal inspired by the classic Reuben sandwich. Ready in just 30 minutes, this recipe combines tender corned beef, tangy sauerkraut, crunchy coleslaw, and melted Swiss cheese, all topped with homemade Thousand Island dressing. Perfect for an easy dinner or make-ahead lunch option.

Ingredients

Thousand Island Dressing

  • ½ cup mayonnaise
  • 2 tablespoons minced yellow onion
  • 1 tablespoon ketchup
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon lemon juice
  • ¼ teaspoon paprika
  • ⅛ teaspoon kosher salt

Reuben Bowls

  • 1 tablespoon unsalted butter
  • 1 pound deli corned beef, sliced then cut into strips
  • 16-ounce bag coleslaw or 1 pound red cabbage
  • 2 green onions, finely sliced
  • 14.5-ounce can sauerkraut, drained (about 1 cup)
  • 1 teaspoon caraway seeds
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 cup grated Swiss cheese

Instructions

  1. Prepare Dressing: In a bowl, mix together mayonnaise, minced yellow onion, ketchup, sweet pickle relish, lemon juice, paprika, and kosher salt until well combined. Set aside to let the flavors meld.
  2. Cook Corned Beef: Heat a large skillet over medium heat and melt the butter. Add the sliced corned beef and cook for about 5 minutes, stirring occasionally, until the edges start to brown and the meat is heated through.
  3. Cook Vegetables: Add the coleslaw (or red cabbage) and finely sliced green onions to the skillet with the corned beef. Cook for about 5 more minutes, stirring frequently, until the vegetables are tender but still have some crunch.
  4. Add Sauerkraut and Seasonings: Stir in the drained sauerkraut, caraway seeds, salt, and pepper. Mix everything thoroughly to combine the flavors evenly.
  5. Melt Cheese: Sprinkle the grated Swiss cheese evenly over the mixture in the skillet. Cover with a lid and cook for about 2 minutes until the cheese melts and becomes bubbly.
  6. Serve: Spoon the hot Reuben mixture into bowls. Drizzle the prepared Thousand Island dressing over the top, and serve immediately for best flavor.

Notes

  • You can substitute store-bought Thousand Island dressing for convenience.
  • To prep in advance, cook the corned beef, coleslaw, and green onions ahead of time and store in the refrigerator. When ready to serve, reheat, add sauerkraut and caraway seeds, then top with cheese and melt as instructed.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days, keeping the dressing separate if possible.
  • Reheat leftovers in a skillet over medium heat or microwave in 30-second intervals until hot, then add dressing before serving.
