These Reuben Sliders with Corned Beef are perfect for game day or a casual dinner, featuring layers of thinly sliced corned beef, melted Swiss cheese, tangy sauerkraut mixed with Thousand Island dressing on buttery Hawaiian rolls. Baked until golden and gooey, these sliders are irresistible and great for sharing.

Ingredients

Sliders

  • 1 (12-count) package sweet Hawaiian rolls
  • ½ pound deli corned beef or pastrami, sliced thin
  • ½ pound Swiss cheese or provolone, sliced thin
  • 8 ounces sauerkraut, drained
  • ½ cup Thousand Island Salad Dressing (plus extra for dipping)

Topping

  • ¼ cup butter, melted
  • 2 teaspoons Dijon mustard
  • ½ teaspoon garlic powder
  • 1 teaspoon poppy seeds (optional)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F. Lightly spray a 9×13 inch baking pan with cooking spray and set it aside.
  2. Slice Rolls: Keep the package of Hawaiian rolls intact as one large loaf. Using a long serrated knife, carefully slice the loaf in half horizontally to create a top and bottom layer without separating the individual rolls. Place the bottom half in the prepared pan.
  3. Layer Cheese and Meat: Evenly sprinkle half of the sliced Swiss cheese over the bottom half of the rolls. Layer the thinly sliced corned beef or pastrami slices over the cheese, then top with the remaining cheese slices.
  4. Mix and Add Sauerkraut: In a small bowl, combine the drained sauerkraut and ½ cup of Thousand Island dressing. Spread this sauerkraut mixture evenly over the cheese layer.
  5. Top the Sliders: Place the top half of the rolls carefully over the sauerkraut mixture, keeping the rolls connected.
  6. Prepare Butter Mixture and Brush: In a small bowl, whisk together the melted butter, Dijon mustard, and garlic powder. Using a silicone brush, evenly coat the tops of the rolls with this buttery mixture. Sprinkle with poppy seeds if using.
  7. Bake Covered: Cover the pan tightly with foil and bake for 15-20 minutes, or until the cheese inside has fully melted.
  8. Bake Uncovered: Remove the foil and bake for an additional 5 minutes, or until the tops of the sliders are golden brown and slightly crispy.
  9. Rest and Serve: Let the sliders cool slightly to set before slicing into individual sandwiches. Serve warm with extra Thousand Island dressing for dipping.

Notes

  • To prevent sogginess, thoroughly drain sauerkraut using a mesh strainer, then press out excess moisture with paper towels or a clean kitchen cloth.
  • Ensure cheese is completely melted before removing the pan from the oven.
  • Use a serrated bread knife when slicing the loaf and individual sliders for clean cuts.
  • Do not slice sliders until just before serving to keep them warm and fresh.
  • Store leftovers covered with foil or in an airtight container in the refrigerator for up to 5 days. Reheat in a 350°F oven, brushing tops with melted butter and covering with foil to retain moisture.
  • If preferred, Russian dressing can be substituted for Thousand Island dressing for a spicier flavor.
