This Ribbon Carrot Salad is a fresh, vibrant side dish featuring thinly sliced carrots tossed with a zesty lemon-mustard dressing, crunchy pistachios, and fragrant herbs. Optional feta adds a creamy, salty finish, making it a perfect light salad to accompany any meal or serve as a healthy snack.

Ingredients

For the Salad

  • 4 cups shredded carrots (about 1 pound or 5–7 medium carrots)
  • 1/3 cup finely chopped pistachios
  • 1-1/2 tablespoons chopped fresh or freeze-dried dill
  • 1-1/2 tablespoons chopped fresh or freeze-dried parsley
  • Feta cheese, optional for sprinkling on top

Dressing

  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon-style mustard
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • Zest of 1/2 large lemon
  • 1-1/2 tablespoons fresh lemon juice
  • Salt and pepper to taste (about 1/4 teaspoon salt and 1/8 teaspoon pepper)

Instructions

  1. Prepare the Dressing: Combine the red wine vinegar, Dijon mustard, olive oil, honey, lemon zest, and lemon juice in a wide-mouth jar. Season with salt and pepper (approximately 1/4 teaspoon salt and 1/8 teaspoon pepper). Seal the jar and shake vigorously until the dressing is smooth and well combined, ensuring no honey remains stuck at the bottom.
  2. Prepare the Carrots: Wash and peel the carrots thoroughly. Using a julienne peeler or the large holes of a box grater, create thin carrot strands. Measure out 4 cups of shredded carrots and place them into a large mixing bowl.
  3. Add Mix-ins: Add the finely chopped pistachios, chopped dill, and parsley to the bowl with the carrots.
  4. Toss with Dressing: Pour the prepared dressing over the carrot mixture to taste — you may not need to use all of it. Gently toss everything together until the carrots and herbs are well coated with the dressing. Taste and adjust seasoning with additional salt and pepper if desired.
  5. Chill and Serve: You can serve the salad immediately or chill it for 15 to 30 minutes to allow the flavors to meld. If using feta cheese, sprinkle it on top just before serving for the best texture.
  6. Final Note: For best texture, if you are storing leftovers, keep the carrots, dressing, and nuts separate and toss right before serving.

Notes

  • Note 1: 4 cups of shredded carrots is roughly equivalent to 1 pound, or about 5–7 medium carrots.
  • Storage: Only dress the amount of salad you will eat on the same day. For leftover carrots, store separately from the dressing and nuts, then combine just before serving to maintain the salad’s crunchiness.
