A delicious and simple roasted carrot and garlic spread made by roasting carrots and garlic together, then blending them into a smooth, flavorful spread. Perfect as a healthy appetizer or accompaniment to bread and crackers.

Ingredients

Vegetables

  • 5 carrots, peeled and cut into coins
  • 5-6 garlic cloves, peeled

Seasonings

  • Salt, to taste
  • Black pepper, to taste

Others

  • 2 tbsp olive oil
  • 50 ml water

Instructions

  1. Prepare the carrots and garlic: Peel the carrots and slice them into coin shapes. Peel the garlic cloves, making sure all skins are removed.
  2. Combine ingredients in baking pan: Place the carrot coins, peeled garlic cloves, salt, pepper, olive oil, and water into a small oven-safe pan. Use your hands or a spoon to mix everything thoroughly, coating the vegetables evenly.
  3. Bake the mixture: Preheat your oven to 200°C (392°F). Place the oven pan inside and roast for about 55 to 60 minutes, or until the carrots are soft and easily pierced with a fork.
  4. Blend the roasted vegetables: Transfer the roasted carrots, garlic, and all the cooking juices into a bowl. Use a blender or potato masher to mash everything together until you achieve a smooth, spreadable consistency. Adjust seasoning as needed.

Notes

  • You can substitute olive oil with any mild-flavored oil if preferred.
  • For a chunkier texture, mash by hand instead of blending.
  • Serve this spread chilled or at room temperature with fresh bread or crackers.
  • Storing leftovers in an airtight container in the refrigerator keeps the spread fresh for up to 3 days.
