Ingredients

Cornish Hens and Aromatics

  • 2 whole Cornish hens (about 1 1/2 lb each)
  • 2 sprigs rosemary
  • 4 sprigs thyme
  • 1 large onion (cut in quarters)
  • 6 cloves garlic
  • 1 lemon (cut in slices)
  • 2 tablespoons olive oil

Dry Rub

  • 1 teaspoon salt (or to taste)
  • 1 teaspoon pepper (or to taste)
  • 1 tablespoon Italian seasoning
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Prepare the Dry Rub: In a small bowl, combine the salt, pepper, Italian seasoning, smoked paprika, garlic powder, and red pepper flakes, mixing thoroughly to create an even seasoning blend.
  2. Season the Hens: Pat the Cornish hens dry using paper towels to ensure crispy skin during roasting. Generously rub the dry seasoning mix all over the exterior and inside the cavity of each hen for maximum flavor infusion.
  3. Preheat the Oven: Set your oven to 425°F (220°C) to ensure it’s hot enough for roasting, which helps develop a crispy golden skin and juicy meat.
  4. Prepare the Roasting Pan: In a 9×13-inch roasting pan, arrange the rosemary, thyme, garlic cloves, quartered onion, and half the lemon slices. This bed of aromatics will infuse the hens with fragrant flavors as they roast.
  5. Arrange and Oil the Hens: Place the seasoned hens on top of the herbs and onion in the roasting pan. Drizzle the olive oil evenly over the hens to help with browning and moisture retention.
  6. Roast the Hens: Transfer the roasting pan to the preheated oven. Roast for 50 to 60 minutes, or until an instant-read thermometer inserted into the thickest part of the breast registers 165°F (74°C), signaling the hens are cooked through.
  7. Rest and Serve: Remove the hens from the oven and let them rest for 20 minutes to allow the juices to redistribute. Garnish with additional thyme, lemon slices, and rosemary before serving, ideally over mashed potatoes for a complete meal.

Notes

  • Leftover roasted Cornish hens will keep well for 3-4 days refrigerated or can be frozen for 1-3 months.
  • The hens reheat nicely in the microwave, or for better flavor retention, reheat in a skillet with some pan drippings to prevent dryness.
  • Using an instant-read thermometer ensures perfectly cooked poultry and food safety.
  • Roasting on a bed of herbs and aromatics enhances flavor without extra effort.
