This Roasted Strawberry Whipped Ricotta Toast combines oven-roasted juicy strawberries with fluffy whipped ricotta and fresh thyme, all layered on crisp rustic bread. It’s an elegant and easy-to-make breakfast, snack, or appetizer bursting with vibrant flavors and delightful textures.

Ingredients

Roasted Strawberries

  • 1 pound strawberries, ends removed
  • 2 tablespoons honey
  • Juice of 1/2 lemon
  • 4 sprigs fresh thyme, plus extra for garnish

Toast

  • 2 slices rustic bread, 1-inch thick
  • 1 tablespoon olive oil

Whipped Ricotta

  • 3/4 cup whole milk ricotta cheese
  • Pinch of sea salt

Instructions

  1. Roast the Strawberries: Preheat your oven to 400°F (200°C). Place the strawberries in a medium baking dish, drizzle with honey, squeeze the lemon juice over them, and scatter thyme sprigs on top. Roast for 20 minutes, stirring halfway through, until the strawberries are soft and syrupy. Remove from the oven and set aside to cool.
  2. Toast the Bread: Drizzle the slices of rustic bread with olive oil. Place them in the oven and toast for 1 minute, until lightly golden and crisp.
  3. Whip the Ricotta: Add ricotta cheese to a food processor. Pulse for 30 seconds to 1 minute, scraping down the sides as needed until the ricotta becomes light, fluffy, and smooth.
  4. Assemble the Toast: Spread the whipped ricotta evenly over each toasted bread slice. Spoon the roasted strawberries along with their juices on top of the ricotta. Garnish with additional fresh thyme leaves and a pinch of sea salt. Serve immediately to enjoy the toast while the bread is crisp and the strawberries warm.

Notes

  • Use fresh, high-quality ricotta cheese for the creamiest spread.
  • Try experimenting with different fresh herbs, such as basil, to add a unique flavor twist.
  • This recipe is best served immediately to maintain the crispness of the bread and the warmth of the strawberries.
  • Works well as a brunch dish, healthy snack, or even a light dessert option.
