A rich and flavorful Roasted Tomato Soup with fresh herbs, perfect for a comforting meal. This recipe features oven-roasted Roma tomatoes, garlic, and onion blended with fresh thyme and basil, then finished with a touch of cream or coconut milk for a creamy texture.

Ingredients

Vegetables

  • 2 ½ pounds Roma tomatoes
  • 1 large yellow onion
  • 6 cloves garlic (in skin)

Seasonings & Herbs

  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 4 sprigs fresh thyme
  • ½ cup fresh basil leaves

Liquids & Oils

  • 3 tablespoons olive oil
  • 3 cups vegetable broth
  • ¼ cup heavy cream or coconut milk (optional)

Instructions

  1. Preheat and Prepare Vegetables: Preheat your oven to 400°F (200°C). Cut the Roma tomatoes in half, roughly chop the onion, and leave the garlic cloves in their skins to roast.
  2. Season and Arrange: Spread the tomatoes, onion, and garlic evenly on a baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper to season.
  3. Roast Vegetables: Roast in the oven for 35 to 40 minutes until the tomatoes are blistered and the garlic cloves are soft and fragrant.
  4. Cool and Prepare Garlic: Allow the roasted vegetables to cool slightly. Squeeze the softened garlic out of its skins and discard the skins.
  5. Combine Ingredients in Pot: Transfer the roasted tomatoes, onion, and garlic into a large pot. Add fresh thyme sprigs, basil leaves, and vegetable broth.
  6. Simmer Soup: Simmer the mixture over medium heat for 10 to 15 minutes to allow the flavors to meld beautifully.
  7. Blend Until Smooth: Remove the thyme sprigs, then blend the soup until smooth using an immersion blender or by blending in batches in a countertop blender.
  8. Finish and Serve: Taste and adjust the seasoning as needed. If desired, stir in heavy cream or coconut milk for creaminess, and gently heat before serving.

Notes

  • For an extra smooth texture, strain the blended soup through a fine mesh sieve.
  • If using canned tomatoes, roast them briefly with garlic and onion to enhance the flavor.
  • Add red pepper flakes or smoked paprika if you prefer a spicy kick.
