Ingredients

Salami Cups

  • 24 slices salami, large size (4 inches in diameter), regular or spicy

Filling

  • 1/2 cup fresh mozzarella cheese (4 oz), diced
  • 1/2 cup cherry tomatoes, quartered
  • 1/3 cup marinated bell pepper, well drained and coarsely chopped
  • 1/4 cup pitted kalamata olives, chopped (optional)
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup fresh basil leaves, thinly sliced
  • 1/3 cup marinated artichoke hearts, well-drained and coarsely chopped (optional)

Instructions

  1. Form the Salami Cups: Lay each slice of salami over the cups of a standard muffin tin or cupcake pan. Use a small ramekin or measuring cup to gently press each slice into the cup, creating little pleats that will help the salami hold its bowl shape during baking.
  2. Bake the Salami: Preheat the oven to 400°F (204°C). Bake the salami-lined muffin tins for 7 to 9 minutes or until the edges of the salami are crisp and the cups hold their shape. Remove from oven and allow the salami cups to cool in the pan for 5 minutes.
