This Salisbury Steak Meatballs recipe combines flavorful ground beef meatballs seasoned with herbs, cooked until browned, and smothered in a rich mushroom and onion gravy. Perfect served over mashed sweet potatoes, it’s a comforting, paleo and Whole30 compliant meal that’s easy to prepare and packed with savory goodness.

Ingredients

For the Meatballs

  • 1 lb ground beef
  • ½ tsp sea salt
  • ¼ tsp black pepper (omit for AIP)
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • 2 tsp coconut aminos
  • 2 tsp compliant ketchup (use Whole30 or AIP versions, see notes)
  • 1 tbsp avocado oil

For the Gravy

  • 1 tbsp avocado oil
  • ½ yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 ½ cups mushrooms, sliced
  • 1 cup beef broth
  • 1 tbsp coconut aminos
  • 1 tbsp compliant ketchup
  • ½ tsp sea salt
  • ¼ tsp black pepper (omit for AIP)
  • 2 tsp arrowroot starch
  • 1 tbsp chopped parsley, for topping

Instructions

  1. Prepare the Meatballs: In a large bowl, combine ground beef with sea salt, black pepper (if using), dried thyme, dried oregano, coconut aminos, compliant ketchup, and avocado oil. Mix thoroughly until all ingredients are well incorporated. Shape the mixture into uniformly sized meatballs.
  2. Cook the Meatballs: Heat avocado oil in a large pan over medium heat. Add meatballs and cook for 3-4 minutes per side until browned and internal temperature reaches 165°F (74°C). Remove meatballs from the pan and set aside.
  3. Sauté Vegetables: In the same pan, add more avocado oil if necessary. Sauté the sliced onions for 5-6 minutes until soft. Add minced garlic and sauté for an additional minute. Stir in sliced mushrooms and cook for 3-4 minutes until they become fork-tender.
  4. Make the Gravy: Pour in beef broth, coconut aminos, compliant ketchup, sea salt, and black pepper (if using). Stir everything together. Whisk in arrowroot starch to the mixture and reduce heat, allowing the sauce to thicken over 2-3 minutes.
  5. Combine and Simmer: Once the gravy thickens, return the meatballs to the pan. Spoon the gravy over the meatballs and let them simmer for a few minutes to reheat and absorb the flavors.
  6. Serve: Garnish the meatballs with chopped parsley. Serve warm, ideally over mashed sweet potatoes or your preferred side dish.

Notes

  • For a premade compliant ketchup, try Whole30 or AIP-specific options as indicated, or see the Autoimmune Protocol Comfort Food Cookbook for an AIP ketchup recipe.
  • Using an AIP ketchup may contain sweeteners and thus may not keep the dish Whole30 compliant.
  • If you prefer to omit ketchup, you can substitute with nomato sauce and adjust seasonings to your taste.
  • Nutritional information are estimates and do not account for optional ingredients like mashed sweet potatoes.
