Ingredients

For the Salmon

  • 1 pound skinless salmon fillet (center cut preferred), cut into 1-inch cubes
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon Aleppo pepper or red pepper flakes
  • 1 lemon, zested and juiced
  • Extra virgin olive oil (for drizzling and cooking)
  • Kosher salt

For the Crispy Rice

  • 2 to 3 cups cooked basmati rice
  • 3 to 4 tablespoons Greek yogurt
  • 1 tablespoon ghee, melted
  • Extra virgin olive oil (for cooking)
  • Kosher salt

Toppings

  • 3 baby bell peppers, cut into rings
  • 3 green onions, chopped
  • 1 cup chopped fresh cilantro or parsley
  • 1/4 cup chopped sun-dried tomatoes
  • Feta cheese, crumbled, for serving (optional)

Instructions

  1. Season the salmon: In a medium mixing bowl, toss the salmon cubes with the oregano, garlic powder, Aleppo pepper, lemon zest, a drizzle of olive oil, and a large pinch of kosher salt. Set aside at room temperature to marinate while preparing the rice.
  2. Season the rice: In another medium bowl, combine the cooked basmati rice, Greek yogurt, and melted ghee. Mix thoroughly until every grain of rice is evenly coated, which will help the rice crisp up beautifully.
  3. Crisp the rice: Heat about 2 tablespoons of extra virgin olive oil in a large non-stick skillet over medium-high heat. When the oil shimmers, spread the rice mixture evenly across the pan’s bottom. Let it cook undisturbed for about 3 minutes to develop a golden crust. Use a wooden spoon to lift and check the rice; if golden, toss and spread again. Adjust heat to medium to avoid burning. Continue cooking, stirring and spreading occasionally, for 10 to 15 minutes until most of the rice is crispy and golden brown.
  4. Sauté the vegetables: While the rice crisps, heat 1 tablespoon olive oil in another non-stick pan over high heat. Add the baby bell peppers and green onions, season with a pinch of kosher salt, and cook until vegetables are golden and slightly charred, about 3 to 5 minutes. Remove from heat and set aside.
  5. Cook the salmon: In the same pan used for vegetables, add a little more olive oil and heat over medium-high until shimmering. Place the salmon cubes in the pan so each piece contacts the surface directly. Reduce heat to medium, cook undisturbed for 4 to 5 minutes until the bottom is crispy and the flesh looks cooked about halfway through. Flip the salmon and cook for another 1 to 2 minutes until the salmon flakes easily with a fork.
  6. Assemble and serve: Divide the crispy rice and cooked salmon evenly among four bowls. Top each bowl with the sautéed peppers and onions, fresh chopped herbs, sun-dried tomatoes, and crumbled feta if using. Optionally, finish with a drizzle of tahini green goddess dressing, tzatziki, or ladolemono for extra flavor.

Notes

  • You can substitute basmati rice with jasmine or long-grain rice, but basmati gives the best texture for crisping.
  • Use center-cut salmon fillets for even cooking and easier cubing.
  • Adjust the Aleppo pepper quantity to control spiciness; replace with paprika for a milder flavor.
  • For a dairy-free version, omit the Greek yogurt and feta cheese, and substitute ghee with clarified butter or oil.
  • For extra crispiness in the rice, ensure the rice is slightly cooled and not freshly hot from cooking.
  • Toppings can be customized with other fresh herbs like mint or basil for a different flavor profile.
  • Serve immediately for best texture, especially to keep rice crispy.
