Sardine Toasts with Goat Cheese are a simple yet flavorful appetizer featuring crispy baguette slices topped with a creamy blend of goat and cream cheese, spicy cracked pepper sardines, sweet cherry peppers, and fresh parsley. Perfectly toasted and easy to prepare, these toasts make an elegant snack or starter.

Ingredients

Bread and Oil

  • 8 slices 1/2-inch thick fresh baguette
  • 2 TBSP olive oil

Cheese Spread

  • 2 TBSP plain goat cheese
  • 2 TBSP plain cream cheese

Toppings

  • 1 can King Oscar Brisling Sardines, drained (preferably spicy cracked pepper variety)
  • 4 sweet cherry peppers, sliced, stems removed
  • Freshly cracked black pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven: Set your oven to 400ºF to prepare for toasting the baguette slices.
  2. Slice the bread: Use a serrated knife to cut the baguette into 1/2-inch thick slices. Arrange the slices evenly on a baking sheet.
  3. Brush with olive oil and toast: Lightly brush each baguette slice with olive oil using a pastry brush. Bake in the preheated oven for 5-8 minutes or until the slices turn golden and crisp. Remove from the oven and allow to cool.
  4. Prepare cheese spread: Combine goat cheese and cream cheese in a microwave-safe bowl. Heat in the microwave for about 15 seconds until softened enough to stir smoothly and become spreadable.
  5. Spread cheese on toasts: Evenly spread the softened cheese mixture on each toasted baguette slice. Season with freshly cracked black pepper according to taste.
  6. Add toppings: Layer sliced sweet cherry peppers onto the cheese-covered toasts, then place one sardine fillet on top of each.
  7. Garnish and serve: Sprinkle freshly chopped parsley over each toast for freshness and color. Serve immediately to enjoy the crisp texture and vibrant flavors.

Notes

  • Leftover toasts do not stay crisp but can be refrigerated in an airtight container for up to 3 days.
  • To maintain the best texture, it’s recommended to prepare this dish right before serving.
  • Using spicy cracked pepper sardines adds a nice kick, but you can choose milder varieties if preferred.
