Ingredients

Acorn Squash

  • 1 acorn squash, halved and seeds removed

  • 100 g burrata cheese
  • 2 tbsp mascarpone or cream cheese

Instructions

Roast in the preheated oven for 30 to 35 minutes until the squash is fork-tender and takes on a golden color around the edges.
  3. Prepare Whipped Burrata Mixture: While the squash roasts, combine burrata cheese, mascarpone (or cream cheese), and lemon zest in a small bowl. Whip together vigorously until the mixture is smooth, creamy, and well blended. Set aside at room temperature.
  4. Make Chili-Honey Pistachios: In a small saucepan over low heat, gently warm honey, chili flakes, and smoked paprika, stirring occasionally. Once the honey mixture is warm and bubbling lightly, remove from heat and immediately stir in the chopped pistachios. Allow the mixture to cool slightly so it thickens just a bit but remains pourable.
  5. Assemble the Dish: Remove the roasted acorn squash from the oven and let it cool slightly to avoid melting the cheese too fast. Spoon the whipped burrata mixture generously into the hollow centers of each squash half. Drizzle the chili-honey pistachio mixture evenly on top, allowing nuts and sauce to cascade over the cheese and squash.
