Shirred eggs are a simple yet elegant baked egg dish featuring eggs gently baked in cream with fresh chives and Parmesan cheese, creating a rich, creamy texture with a delicate flavor perfect for any breakfast or brunch occasion.

Ingredients

Egg Mixture

  • 2 large eggs
  • 2 teaspoons heavy cream
  • Salt to taste
  • Freshly ground black pepper to taste

For Preparation

  • 1/4 teaspoon unsalted butter
  • 1 teaspoon minced fresh chives
  • 1 tablespoon grated Parmesan cheese

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the perfect temperature for baking the eggs evenly.
  2. Prepare Ramekin: Grease a 6-ounce ramekin thoroughly with the unsalted butter, covering the bottom and sides to prevent sticking and add flavor.
  3. Add Cream and Eggs: Pour the heavy cream into the buttered ramekin and carefully crack the two large eggs on top, being cautious not to break the yolks for optimal texture.
  4. Season Eggs: Sprinkle salt and freshly ground black pepper over the eggs according to taste, then add the minced fresh chives and the grated Parmesan cheese evenly over the top.
  5. Bake: Place the ramekin on a baking sheet and bake in the preheated oven for 12 to 15 minutes, until the egg whites are fully set but the yolks remain runny to your preference.
  6. Rest and Serve: Remove the ramekin from the oven and allow it to rest for a couple of minutes to let the dish set slightly before serving warm.

Notes

  • Use fresh, high-quality eggs for the best flavor and texture.
  • You can substitute Parmesan cheese with Gruyère or cheddar for variation.
  • If you prefer fully cooked yolks, increase the baking time by a few minutes.
  • Serve with toasted bread or a light salad for a complete meal.
  • Be careful when cracking eggs into the ramekin to keep yolks intact for the classic shirred egg presentation.
