Delicious and vibrant Shrimp Fajitas featuring tender marinated shrimp and sautéed bell peppers and onions, baked to perfection with a flavorful blend of spices. Perfect served with soft shell tacos, fresh cilantro, lime wedges, salsa, or guacamole for a quick and easy Tex-Mex meal.

Ingredients

Shrimp and Vegetables

  • 1 lb ButcherBox Raw Gulf Shrimp, thawed, peeled, deveined, tail off
  • 2 cups thinly sliced bell peppers (approximately 2 peppers)
  • 2 cups thinly sliced onions (approximately 2 onions)

Shrimp Marinade

  • 2 tablespoons olive oil
  • 1/4 cup fresh lime juice
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/4 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper

Optional for Serving

  • Soft shell tacos
  • Cilantro
  • Limes
  • Salsa
  • Guacamole

Instructions

  1. Prepare the Marinade: In a large bowl, combine olive oil, fresh lime juice, paprika, cumin, salt, chili powder, dried oregano, and black pepper until fully mixed.
  2. Marinate Shrimp and Vegetables: Add the thawed shrimp, sliced bell peppers, and sliced onions into the marinade. Toss everything together to ensure all ingredients are evenly coated. Let the mixture marinate for 20 minutes to absorb the flavors.
  3. Preheat Oven and Prepare Baking Sheet: While the shrimp and vegetables marinate, preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper to prevent sticking and ease cleanup.
  4. Arrange and Bake: Spread the marinated shrimp and vegetables evenly on the prepared baking sheet in a single layer for even cooking.
  5. Bake to Perfection: Bake in the preheated oven for 12 to 15 minutes. For an extra charred effect on the shrimp and veggies, switch your oven to broil and broil for the last minute, watching carefully to avoid burning.
  6. Serve: Serve the shrimp fajitas warm as is or with soft shell tacos, fresh cilantro, lime wedges, salsa, and guacamole for a complete, flavorful meal.

Notes

  • Marinating the shrimp and vegetables enhances flavor but you can reduce the marinating time if needed.
  • Please ensure shrimp is fully thawed before marinating for even cooking.
  • Broiling for the last minute adds a nice char but watch closely to prevent burning.
  • You can customize the fajitas by adding other vegetables like zucchini or mushrooms.
  • Serve with warm tortillas and your favorite toppings to create a satisfying meal.
