A hearty and flavorful Slow Cooker Beef Ramen Noodles recipe that combines tender ground beef, fresh vegetables, and rich broth, slow-cooked to perfection. This easy-to-make dish offers the comfort of classic ramen with the convenience of a slow cooker, perfect for busy days or cozy dinners.

Ingredients

Beef and Vegetables

  • 1 pound ground beef (sirloin, 93/7 recommended)
  • 1 cup matchstick carrots
  • 1 medium red bell pepper, sliced
  • 2-3 large scallions, roughly chopped
  • 3 cloves garlic, minced

Sauce and Broth

  • ½ cup low sodium soy sauce
  • 2 tablespoons brown sugar
  • 14.25 ounces chicken stock or beef stock

Ramen and Garnishes

  • 2 packs ramen noodles (discard seasoning packets)
  • Sesame seeds (optional)
  • Additional scallions for garnish (optional)

Instructions

  1. Brown the Beef: Heat a large skillet over medium heat and cook the ground beef until no longer pink, breaking it apart as it cooks. Drain any excess grease to keep the dish leaner.
  2. Transfer to Slow Cooker: Pour the cooked beef into the basin of a 6-quart slow cooker, spreading it evenly.
  3. Add Vegetables: Add the matchstick carrots, sliced red bell pepper, and roughly chopped scallions to the slow cooker with the beef.
  4. Prepare Sauce: In a medium bowl, whisk together the minced garlic, low sodium soy sauce, brown sugar, and chicken or beef stock until the sugar dissolves and ingredients are fully combined.
  5. Combine and Cook: Pour the sauce mixture into the slow cooker over the beef and vegetables. Stir gently to combine all ingredients.
  6. Slow Cook: Cover the slow cooker and cook on LOW for 4 to 6 hours, allowing the flavors to meld and the ingredients to tenderize perfectly.
  7. Add Ramen Noodles: About 30 minutes before serving, add the dry ramen noodles (discard the seasoning packets) into the slow cooker. Stir frequently to ensure noodles are evenly coated and cook thoroughly.
  8. Serve and Garnish: When the noodles are tender, serve the beef ramen hot, topped with additional scallions and optional sesame seeds for added texture and flavor.

Notes

  • Skip the noodles and serve the beef mixture over rice or in lettuce leaves for a low-carb alternative.
  • Use ground turkey or chicken instead of beef for a lighter version of this dish.
  • For extra heat, add red pepper flakes or a dash of sriracha to the broth.
  • Enhance the broth’s depth by incorporating fish sauce or oyster sauce.
  • Finish with a squeeze of lime juice to add a bright, zesty flavor.
  • Add fresh ginger to the broth or top the finished dish with pickled ginger for an aromatic boost.
  • For a soupier consistency, use only one pack of ramen noodles instead of two.
  • Store leftovers in an airtight container once cooled to preserve freshness and avoid condensation.
  • Refrigerate leftovers and consume within 3 days for best quality and safety.
