Ingredients

Beef and Seasoning

  • 2 pounds Stew Beef
  • 1 small Onion, chopped
  • 3 cloves Garlic, minced
  • 1 envelope Birria Seasoning Packet (1 ounce)
  • 1 cup Beef Stock

Slider Assembly

  • 12 count Hawaiian Rolls
  • 6 slices Colby Jack Cheese
  • 2 tablespoons Butter
  • 1/2 teaspoon Garlic Salt
  • 1 tablespoon Parsley or Cilantro, chopped

Optional Toppings

  • Cilantro
  • Red Onion
  • Lime
  • Jalapenos

Instructions

  1. Add Ingredients to Slow Cooker: Place the stew beef, chopped onion, minced garlic, birria seasoning packet, and beef stock into the slow cooker.
  2. Cook the Beef: Slow cook on low heat for 4-6 hours until the stew beef is tender and easily shredded.
  3. Shred the Beef: Remove the beef from the slow cooker and shred it using two forks.
  4. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the sliders.
  5. Prepare Rolls: Slice the Hawaiian rolls in half horizontally and place the bottom halves into a 9×13 inch baking dish.
  6. Layer Cheese and Beef: Place slices of Colby Jack cheese over the bottom halves of the rolls, then top with the shredded beef and optional toppings such as cilantro, red onion, or jalapenos.
  7. Top the Sliders: Place the top halves of the rolls over the layered cheese and beef.
  8. Prepare Butter Mixture: In a microwave-safe bowl, melt the butter with garlic salt and chopped parsley in 30-second intervals, stirring each time.
  9. Brush Butter on Rolls: Generously brush the melted butter mixture on top of the rolls.
  10. Bake the Sliders: Bake in the preheated oven for 12-15 minutes or until the cheese has melted and the tops are golden.
  11. Serve: Serve the sliders with the warm cooking liquid from the slow cooker for dipping and lime wedges for squeezing.

Notes

  • If the cheese hasn’t fully melted but the buns are toasted, cover the sliders loosely with foil and bake for an additional 2-3 minutes.
  • To avoid soggy rolls when making ahead, store the shredded beef in its cooking broth and reheat it before assembling the sliders.
  • Layering cheese on the bottom half of the rolls prevents the bread from becoming soggy by acting as a barrier.
  • Serve sliders with extra fresh toppings like cilantro, diced onion, lime wedges, or jalapeños for added flavor just like traditional birria tacos.
